Seafood with fruit - Sat, 06/30/07 4:00 PM

I just had (made) a great lunch dish - I had some small cooked shrimp left over from dinner - added some lime juice and cracked black pepper and put it in a small green melon half. What a treat! I was thinking that there's lots of dishes that combine seafood (esp. shellfish)and fruits.

Any suggestions?

I personally enjoy fruit with any thing including pork, beef, fowl and almost anything salty. Along with that, add some cheese, creame cheese and some salad.

A good no-cook summer dinner is shrimp or crab salad served in halved avocados. How about shrimp and fresh pineapple kabobs?

Few seafoods aren't improved with the addition of a little (or, in my case, a LOT) of lemon.

We love shrimp kabobs threaded with a chunk of pineapple in the hollow of the curved shrimp, brushed with spicy sweet thai chile sauce and served with sticky rice. Add cucumber salad on the side.
I've also made lobster salad with grapefruit and coconut with a thai peanut dressing that was wonderful.

My step-daughter was recently married on the gulf coast of Florida and the main course for their wedding reception was grilled grouper with mango salsa - great use of fruit and seafood. (And before you start with the 'Was it real grouper?' comments; yes, it was, and we stood there at the dock while they were being filleted and then rushed them over to the wedding site.)

Fruits are like vegetables. They're sometimes nice to look at, but it doesn't make sense to actually eat them.

Saturday is just another day. I enjoy them all. One of the ways I manage to enjoy them is to refrain from ingesting anything that cannot walk, swim, crawl, slither, hop or fly.

You have to be careful that your seafood is really fresh, but ever try ceviche? I've had a shrimp ceviche with tangy oranges, oh, to die for.

One of our local seafood houses (Red Drum in M.P.) does a seafood ceviche in a Martini glass....shrimp, flounder, bay scallops, with fresh made guacamole in the bottom of the glass.. mouth is watering now!

Now that sounds interesting, and tasty! I could use about 4-5 of them Martini's right now. I would die of total shock if ever the restaurants in my area ever got that clever.
