When I eat Baked Potatos I eat ALL of the potato, inc. the skin. My kids think I'm weird.

How do you prefer it and in what variations, if any?

I'll bet the skin is the best part. I think I'd almost rather have the skin (not fried or otherwise adulterated) -- just cooked.

I like the skin in mashed potatoes, but stay inside the 'boat' when eating bakers.

I agree the skin is the best part of a baked potato provided the potatoes were not wrapped in foil when cooked and the skin is nice and crispy - YUMMY!

My stepdad eats them the same way as well - with the innards hollowed out and a papery jacket of skin on the plate. Sweet potatoes? Same way.

I agree that the skin is the best part, and I remember reading that most of the vitamins are found in a potato's skin. So, I usually do the opposite. When I'm with family, or eating alone, I'll carefully peel the skin off and eat that first. Then, mash up the insides and eat them that way. :)

I buy only organic potatos and I always eat the skin. I like the skin crispy.

The baked potato (for me) includes the butter soaked skin, lightly salted. I eat it as part of the whole potato, not a side-dish!

In most cases I DO NOT do the same with a Yam or Sweet Potato. No real reason for the the change in habit..just the way I eat.

To improve the quality of the entire potato when I bake it, I oil the skin, salt it heavily, put grated garlic over the oil and cover it with onions.

The entire potato is wonderful in my opinion.

Agreed!!!

Only thing more disappointing than a steamed potato is steamed potato skin.

I roughly follow the Joy of Cooking technique: lightly butter the skin and don't poke steam holes until half-way through cooking. Gives a fluffy flesh and crispy skin.

DD - when we were kids we always ate the skin, until the pediatrician once said something to my Sister about the "potato skins" (wax) in her ears. She refused to eat potato skins for several years afterward.

So true, I just had this type of baked potato for lunch. It was wrapped in foil and I added butter and a little sour cream. The skin was delicious.

One of the reasons I prefer to bake my potatoes in a hot (450 degree) oven is to get the skins all crusty and slightly burnt. It is absolutely the best part of the potato!!

If you like crusty, slightly charred skins, you should consider using a kartoffel teufel, aka "Potato Devil" instead of the oven. Its basically an unglazed ceramid pot with a matching lid that is used to bake potatoes on the stovetop. Sort of like a romertopf.

In addition to making great, slighly smoky potatoes, it also is more efficient for small quantities since you don't have to heat up the oven (and the kitchen) to bake one or two potatoes.

I forget where I got mine, but I've had it for years and makes sensational baked spuds. Also great for dry-roasting garlic & shallots (which are great mashed into potatoes).

Sure, the skin is the best part...

When my Brother and I were just wee little tykes (many years ago ), we would cut the baked potato in half, scoop out the "innards", mash that all up with butter, and then stuff it all back into the skins. They were then eaten without the benefit of any utensils at that point. Knife and fork, they were there just for the prep work...

Funny, I would probably still eat them that way...Hey, why change something that works Sooooo Gooood???

How about doing it like Sundancer does it, then slice open the tops, dig out the innards, mix with butter, SC, cheese, ham AND the now cooked onions...plop it all back inside the skin, back in the oven for 15 min for a real nice twice baked!

I rub the skins of my baking 'taters with (yes..) bacon drippings before baking. To ask if they are not eaten is a rather silly question.

I used to eat them the same way. Sometimes I added my green peas which wasn't one of my favorite vegetables. With lots of butter and s&p, they seemed to go down pretty good. pb

I like them rolled up with mustard, steak sauce, or the like. I'll roll 'em up and call them Irish Burritos. I'm told that the skin is the most nourishing part of the potato.

Not to rub it in but I did bake the potato and fry the corn the way Sundancer does it. On top of that I grilled 1/2 lb homemade Jucy Lucy burgers.

I will eat skins in my mashed potatoes I will eat the skins of roasted potatoes but I will not eat the skin of baked poatoes LOL don't know why I've always been that way my husband however will take the skins from the potato I ate and his own and mix it with a bowl full of I mean FULL of ketchup and mustard mixed and eat them .......... rather gross I think

The skins are pretty tasteless on most baked potatoes. The skins really need oil and a coarse sea salt to bring out the flavor and texture of the skin.

And smashed potatoes need the red skins to make the dish.

It is the reservoir of all the spices and butter
I add in order to spice up the meat of the potato,
and the texture, ahh, the texture is a perfect
mate to the softness of the meat of the potato.

At home, always. In a restaurant it will depend on the quality of the skin. But I always expect to enjoy the whole potato not just the innards!

I like to eat all the inside and save the peels. Then I coat them in butter, salt & pepper and take to work for lunch the next day. A few seconds in the microwave melts the butter. Sometimes I will sprinle with green onions and/or bacon bits.

The skins and a piece of fresh fruit make a super lunch... and cheap, too.

I love the skin!!! I wash the skin very well and then coat liberally with olive oil. Sea salt, coarse ground pepper liberally as well. 375 degree oven for 45 minutes or an hour. Wonderfully crunchy skin with a creamy inside. I like to eat the skin with the inside so that it doesn't taste too salty.

Another vote for skin. I just wash them, then bake them at 375 degrees for around 45 minutes (longer if they're big taters). The skin comes out crispy and delicious. They only need a touch of butter and S&P, which is usually pooled on the plate, just waiting.

One thing that drives me up a wall is when I get a baked potato that's been rolled up in that rock salt stuff. When I take a bite of the skin, all I can taste is the salt, and I'm cutting down since I found that my blood pressure is high.

Since no one else is going off topic, allow me: doesn't it drive you crackers when you buy something low fat and check the label for (or taste, to the detriment of everything else) sodium?

I have a baked potatoe about every friday of the year, along with a grilled steak. By the time I get to the skin, it has soaked up some of the juices from the steak, and some of the butter put inside... Yumm!

For those of us who enjoy the earthy flavor in the skin, Beware. In a restayrant dont eat it if it is foil wrapped! Working in different pllaces I learned one important fact. If they are wrapped in foil they may not be washed. I have found mud in thae skin before.
Baked with oil and S&P you see what you eat.

Britt, you're right. I used to work in the kitchen of Ryan's Steakhouse and was often in charge of wrapping bakers for the day:
Step 1 -- dump a 40 lb. box into the utility sink and fill up with tap water.
Step 2 -- drain the sink and start wrapping each potato in foil.

I'd have to wrap for hours and couldn't stop to clean a spud more thoroughly than that. Sometimes there were some dirty ones, but does a 500-degree oven kill everything anyway? I don't know. I often ate potatoes at work and of course would eat the skin, but only if I washed the skin myself. Coincidentally, my friend worked in the kitchen at a smaller restaurant in town, known for their spuds, and he always complained about being the scrubber (he'd scrub boxes of spuds at the sink for hours)! And their potatoes were great.

Yes...definately eat those skins...nutrients...and salted a bit before baking...GREAT.

Some great ideas for cooking the skins, thanks yall! I usually just do butter and s&p. I want to try some of the other ways suggested here.

My first skin served by itself was at TGIF back in the 70s. Bacon, cheese, sour cream, and green onions topping the skins. They were great!
