I like to chop up leftover turkey and add it to the stuffing. Then make hamburger sized patties and then saute them in a little olive oil until crunchy on the outside. Then serve on toast with mayonnaise and a lot of fresh pepper and paprika...Russ

The last time I had a full turkey, I hung the mostly depleted skeleton from the tree directly adjacent to my bird feeder and the birds had a blast. There is only my ugly dog and myself at my house and we could not possibly consume all the left overs. Paul E. Smith knoxville, TN

Turkey soup and/or turkey pot pie. Medium sized turkey chunks in a pan or under the broiler with a slice if cheese til it melts, served on a hamburger bun.

I make all the usual: salad, soup, etc. I also make Kentucky Hot Browns. Got the recipe while living in KY. from Shakertown near Harrodsburg. It's real comfort food!

I second Cajun King's post from last year. Turkey Sausage Gumbo is the way to go. Gumbo of any sort is a beautiful thing and a great way to use leftovers.

Turkey salad, turkey sandwiches, and tomorrow night it's turkey enchiladas. Have an abundance of green enchilada sauce my mom keeps buying when I ask for red (lol), so I have to do something with it before I move to Seattle this month.
