I was at Lexington Market in Baltimore today, and I went for the fried chicken at Parks. It was quite good. The meat was moist and ample. The best part, however, was the skin. The seasoning was simple, but it worked well. I found a nice crispiness that managed to walk the fine line between both greasy and dried out.
Maryland has always been known for its fried chicken, but I find most of what we sell here in the free state to be pretty bad. It's good to know that places like Park's are still providing chicken that we can be proud of.
