I doubt you're going to find it anywhere in New England
Chipped Beef seems to be more of a mid Atlantic thing (Delaware/Pennsylvania/Maryland)

I haven't seen it anywhere here in Rhode Island

Could be at your house. Easy enough to make and then you know you're not getting the powdered stuff.

12 oz. Chipped beef
12 oz. Heavy cream

1. Simmer the chipped beef in the cream until the cream reduces by 1/3.

2. Grab some toast or bisquits.

Add some dried mustard, bit of Cholula, Worchestershire sauce, and some black pepper and I think you'll have something. But, I'd rather use whole milk and some flour to thicken the sauce before adding the meat.

I have to agree, Mr.Hoffman-I am getting a reputation for good creamed chipped beef, and what you describe is pretty much how I make it..

I did find a spot that has it on their daily menu.
The Owl Diner in Lowell Ma. I usually get the ham with my breakfast there, but I may try the chipped beef the next time.
Lowell is a city that still supports about half a dozen diners and all are pretty busy. The Club diner has Biscuits and Gravey on their daily menu and serve a french style baked bean. So if you ever get up that way for a Spinners game it's worth checking out. Chow Jim

Until recently They were serving out the Chipped Beef and gravy you'd dream of in a little marina kitchen known as the "docksider" restaurant in Westerly, RI- I had been eating it there for 20yrs, and like most things, its time came- only to be replaced by a mediocre lunch spot with no SOS! I look forward to hearing what people find- fortunately I find myself in places where it is available often enough and my mother is a master- having learned from hers... I would suggest Evaporated milk, which gives richer flavor, and as I understand was the traditional base for the gravy as it is also canned.

Best SOS, by far is the Navy's! Just something about, being miles out to sea, getting off that mid-watch, going to the mess decks and have some SOS, with a couple sunny side up eggs.

When I was in the ANG back in the early 60's, the ANG had great SOS at Lackland AFB.  I did not particularly enjoy basic training but I did OK due to my prior training at the University of Tennessee in ROTC.

Since then, I have made SOS many times but I have found Stouffer's SOS very good.  I buy it very frequently and have it on toast a couple of times a month.

Here is the menu for Four Sisters Owl Diner.  I see that it does indeed list creamed chipped beef on toast!  I've never had that in a restaurant.  I think I will make a stop there next time I am in Massachusetts.

If I'm not mistaken, I believe Most Navy Cooks and Marine Cooks make it with ground beef, not Dried Chipped Beef.

If the Dried Chipped Beef is hard to find you can use Budding Beef Luncheon Meat. Not quite the same, not as salty, but a decent substitute.

Fishtaco....I agree it was the best....
Yes, they made it both ways....Also made an SOS that had a tomato based, spice flavor called Minced Beef....This was made with ground beef....I loved them all....Wish I had the
recipe....

I've only ever seen Armour Brand Chipped Beef. Have never seen Hormel anywhere.
Here's the Official Creamed Chipped Beef Recipe from Armour's web site:
Creamed Chipped Beef
  • 2 Tbsp. butter
  • 2 Tbsp. all-purpose flour
  • 1 1/2 cups milk
  • 1 2.25-oz. jar ARMOUR® STAR SLICED DRIED BEEF, rinsed, chopped
  • 1/2 tsp. prepared yellow mustard
  • 8 slices white bread, toasted Melt butter in saucepan. Add flour and cook 1 minute.
Add milk all at once. Cook and stir until thickened and bubbly.
Add beef and mustard and heat through.
Serve over toast with a side of ARMOUR® STAR CORNED BEEF HASH.
    Makes 1 1/2 cups

    Marlene,
In SoCal We shopped Stater Brothers Markets most of the time, and a Von's now and then. Both had the Armour brand version of the Hormel jars you see posted.

It's funny how common Biscuits anf Gravy are all over the South, but SOS seems to be an unusual menu item. The two are very closely related,IMHO.

Funny you should mention. I use Pioneer Brand Sausage Gravy Mix for making both Sausage Gravy, ( I add more cooked ground sausage to it) AND for making S.O.S.!

Pioneer makes Quality products. I also use their Buttermilk Pancake & Biscuit Mix to make my Biscuits

Armour has a blue label.  Stouffer's is good albeit on the expensive side in my opinion.  Making it yourself is the way to go and you get twice if not more than with Stouffer's.

My guess would be Chipped beef is just that--Contains Chipped Beef.
SOS could be made with any meat-- like the Navy & Marines use ground Beef.

Ok, I'm a retired Navy guy. SOS the real SOS is the chipped beef kind. All of the breakfast "gravies" however fall under the term SOS. I was on 1 ship that had some sort of SOS every day. There is the chipped beef kind, sausage, hamburger (white) chopped hard boiled eggs, have even seen ham and bacon. Then there is the above mentioned "minced beef" in a tomato sauce and this is good stuff. It's about one step away from pasta sauce, hell you could serve it on pasta. Key thing in it, is nutmeg.  I still love any of them, but the real SOS remains my favorite.

Auxguard, if you're still looking for S.O.S. in CT, then I have the place for you: Bush Meadow Farm in Union, reviewed here on the site.  Barry doesn't make S.O.S. every weekend, but I dropped in once last year when he had and wrote a logbook on it:

From my logbook: This old-time military staple (which stands for S**t [or the more polite Stew] On a Shingle) was different from the creamed chipped beef that my father & I would eat at American Legion breakfasts when I was growing up in South Carolina. Barry’s version was ground beef in a cream gravy that was gray with black pepper, heaped over home fries. It was delicious, just as he assured me it would be. The eggs with a slice of Swiss melted on top and, of course, homemade rye toast were grand as usual, and Barry even included a slice of creamy goat’s-milk feta cheese from a batch that he had just finished. Oh, if Bush Meadow were only closer to my house!

Call ahead and talk to Barry or Nancy -- I bet you could convince them to make it for you!  They also have a nice, new website here.  I really can't say enough good things about the place -- I love it and I wish we lived closer!    Chris

I have a copy of the 1910 U.S. Manual for Army Cooks.  There is a recipe for Beef, chipped (for 60 men)

It has chipped beef, butter, flour, canned evaporated milk, parsley, pepper and beef stock.

I am guessing that this is what became known as S.O.S.

I wonder if this is still the case.  I'm sort of terrified that I'll walk in and ask for it, and they'll look at me like I have leprosy.  Gonna try this Sunday, though!

I'm a fool for good creamed chipped beef and make my own, seasoned with a little Vegetable Magic, fresh black pepper, and L&P (UK).  If there were a Chipped Beef Cook-off, I'd sign up.

I might have posted this some time ago, but I'll try it again -- learned at the kitchen table as my telegrapher dad taught me the code:

Three dot, four dot, two dot, dash,
They serve it in the army and they call it hash.

Sure, that's right, that's exactly what it means.

I'll vote for the Stouffers too, it's pretty good, and the best I can get since my wife got tired of making it for me (years ago!), which meant I would do it, or Stouffers would.

It's sort of thin -- I like to add some small things, like maybe shaved ham, sautéed onion and/or pepper -- nothing drastic.  The hard-cooked eggs sound like they could work, once in a while.

Might have been the worst dish my mother made at home while growing up...I hated it....think she served it because we didn't have much money.  Definitely would not order this no matter who or where they made it at.

I hadn't eaten this since I was a kid (my Mother's was really good) so when I saw it on the menu at the Summit Diner in Somerset, PA I ordered it and it was very good.  We have Stouffer's in the freezer but I never tried it and probably never will.  Too easy to make your own.

Even my mother, whom we in the family called Lucretia (for Lucretia Borgia) behind her back because of her cooking, which we all expected would kill us one day, was able to make edible creamed chipped beef.

I hadn't eaten this since I was a kid (my Mother's was really good) so when I saw it on the menu at the Summit Diner in Somerset, PA I ordered it and it was very good.  We have Stouffer's in the freezer but I never tried it and probably never will.  Too easy to make your own.

Summit Diner serves it? Wow. I missed that. Now I have to go back there.

Yep.  It wasn't a special either, it's on the menu.

If it is as good as everything else we ate there, it would be worth a return trip. Besides, the Laurel Highlands is a particularly beautiful part of PA. I do want to explore more of it.

The Wind Mill Diner in Danbury and New Milford offers creamed chipped beef.  I had it recently and it was not that good.
