What do you like to put on your eggs?

Today I put on tomatillo salsa. Very good. Most of the salsa here in NM (red chile, green chile) work great on eggs...

I agree NYNM,salsa on Scrambled eggs is my fav. But NOT on my over easy.Maybe there a little Hot Sauce.

I like my eggs poached or sunnyside up- love to crumble the bacon on top- break the yolk- a little gray sea salt- a couple twists of the pepper grinder and DONE.
For scrambled- I love home made pico, maybe even a little cheese.
And I have been known to fix them "Italian Style"- olive oil in pan, a potato cut like string fries, scrambled egg mixture poured on when the potato is almost done, and then drizzle a little olive oil over all when serving- Don't knock it until you try it!

mland520,the Italian style sounds great...love potatoes with scrambled eggs,cooked in Extra virgin olive oil.

Cracked black pepper, a titch of salt, a dab of butter
for hard cooked eggs

A sprinkle of cheddar for scrambled. If they are poached in the microwave then I like McCormick's salt free garlic & herb seasoning.

Yes thanks, I'll have the Italian omlette with meat sauce, bacon, a side of sausage, no, the patty, extra crispy home fries, sourdough toast, first though a large V8, decaf, and a large Sprite with breakfast.

I put my easy over eggs on top of a heavily buttered pancake or waffle add salt & pepper, chop up the eggs and dig in!

Salt & pepper - definately. On eggs cooked in various ways.
On scrambled eggs I often crumble bacon. I like thyme with eggs too.
On fried eggs - just s&p. On poached eggs - hollandaise sauce!
Under poached eggs - ham and an english muffin!

It's not so much what I put on the eggs, but in. I roast serrano peppers (2), diced, and chop some green onion, then scramble that. On top, fresh ground black pepper, some grated Cheddar (although American slices can be good too), and a Louisiana style (NOT Mexican) hot sauce.

There's a place in Niantic, Connecticut, David John's, that has a great egg dish. It's eggs scrambled with sliced hot and sweet Italian sausage, peppers, onions and potatoes.

To top the 3 soft-poached eggs I cooked in my 60's Revere ware 3 egg poacher: Place eggs in a shallow bowl. Top each with a pat of butter, grind on some fresh pepper & a sprinkle of salt. Chop it all up with a spoon (of course! These are SOFT poached eggs) and eat it with some toast to sop up all the buttery eggy goodness. For a depraved East Texas White Trash spin, do all of the above but ALSO top the eggs with a "sauce" (I use the word loosely) concocted of Campbell's Cream of Chicken soup, Kraft "Olde English Sharpe" cheese slices & Half&Half or cream or milk. Sometimes I add some chives or other herbs to this. And you don't want to know what I sometimes add for a quasi-meat addition...

Use to be a treat to have homemade chili sauce with our eggs on a Sunday morning.
A bigger treat was to have biscuits & gravy, topped with two soft eggs and homemade chili sauce on the side with ham. Mom knew breakfast.

Am I the only guy whose mother would fry eggs down to parade rest till a kid like me would despise fried eggs? ..... I must say I never had eggs prepared to an edible condition till I joined the Navy.... I can remember my first breakfast in the Navy when walking through the chow line and the mess cook asked me how do you want your eggs... damn I never knew I had a choice....  I heard the sailors in front of me say "over easy"  and I said the same.... I've been loving eggs ever since,  just salt & pepper on top

My Mom's eggs would look like the pic below....yuck.

I'd have killed for eggs that looked the way you say your mother's eggs looked. My mother insisted that if any part of an egg was white it was raw. And if any part of the yolk was less than dark brown it, too, was raw.

My grandma maid eggs like that Michael...we called them "crispy Eggs"...she fried them up in her good Italian Olive oil....yolks were soft,somehow, but the whites got nice and crispy...and oh that hint of olive oil!!!!!!

I have two poached eggs on toast with a shake of Cajun seasoning every morning for breakfast. I would rather have two fried eggs on corn-beef hash. Crispy corn-beef would kick it up several notches into the food of Gods.
But my wife thinks I am going to the Devil with my diet.

On fried : salt, pepper, sometimes a little tomato ketchup or brown sauce on the side.

On poached & scrambled : salt and pepper

On boiled : just salt.

I do understand the whole salsa etc + egg attraction, its just not for me. I like my eggs as fresh & natural and possible, and to taste of egg mostly

I could not eat eggs cooked the way they look in sizz's first picture there, I agree with the distaste. I understand its to some people's taste but to me, overcooked eggs are just plain wrong

I really enjoy a Benedict sauce on top of a poached egg also. Those Yungling drafts sound like a good alternative to coffee.
