I alternate between buckwheat and buttermilk mixes by New Hope Mills from Skaneateles, NY.  This is a great mix, my family has been using it for decades....always with NY maple syrup.

For once I have to agree (?) with Mr. Hoffman.......buckwheat flapjacks are my favorite.

This place puts something in their plain buttermilk pancakes that my wife is addicted to; I'm thinking it is a touch of whipping cream or something illegal. 
 
Sadly, I can't enjoy them as their Texas locations are always filled with squeeling, screeching crumb crunhers.

Some of the best pancakes I've ever tasted came from the Volunteer Fire Dept. at Meadows of Dan, VA. They have an annual pancake breakfast two weekends in Oct. You have a choice of buttermilk or buckwheat as well as fantastic locally produced pork sausage. The linkhttp://www.patrickchamber.com/news.cfm?newsID=3411 doesn't give the dates, but the last day is Sat. Oct. 27 this year. Meadows of Dan is just off the Blue Ridge Parkway in Patrick Co. VA. If you are in the area this weekend, it's well worth a side trip for some delicious pancakes!

Jim, It's my favorite pancake house as well. Come down to Dallas and we'll have brunch at their Lemmon Avenue (eastbound) location and I guarantee you'll be a happy camper!

Grew up in a german/czech house and it was buckwheat pancakes every weekend.

Avoid Bisquick Gluten Free Pancake Mix at all costs. This stuff makes the worlds worst pancakes.
