Can anyone tell me how to cook bacon wrapped scallops that are deep fried. I had some Digby Scallops that were prepared this way in Digby, Nova Scotia last summer and am craving them so much. They were fantastic. What's the difference between sea and bay scallops. I'm not sure what the Digby ones are. They were so sweet.

I don't know why you deep fry them, but my god were they good! If anyone knows how to make these I'd really appreciate it, even if they're not deep fried. Where I tried some in Nova Scotia the waitress told me that's how they were prepared. i would never have guessed that, I thought that they were sauteed.

You can broil them if you like but Angels on Horesback are generally fried.Serve them with a Horseradish Sauce on the side.Ocean Scallops are the sweetest best tasting in my opinion.

Thanks Jellybear, but do you mean fried in a frying pan or deep fried, and whichever you mean, I've never cooked scallops (I'm embarassed to say)before, how long do you cook them for?

the difference is size- Argopecten irradians, bay scallop or the Cape scallop, is smaller and very sweet. The sea scallop (Plactopecten magellanicus) is the largest of the scallops, and can be used for grilling etc.
The taste of both is delicious.... one just takes a little longer to cook than the other.

I always get the very large scallops for this dish. The reason they deep-fry at them restaurants is to get the bacon done. I think this leads to overcooked scallops.
At home I prefer to pre-cook the bacon about two-thirds of the way in a fry pan. Then I wrap the bacon around the scallops and secure with a toothpick. Brush with olive oil.Onto the grill they go. Cook covered turning once to desired doneness. Serve atop some romaine tossed with Caesar dressing.
If deep-frying at home I still pre-cook the bacon so the scallops don't get overdone. Hope this helps!

Bay scallops are very small, and if they are really bay scallops and not calico scallops, they are sweeter than the much larger ocean scallops. Unfortunately, many stores call calicos bay scallops. I wouldn't cook bay scallops for more than three minutes, and for ocean scallops I'd say five minutes would be the limit. You want them to be opaque. Anything more than that is overcooked.

I Saute' them in a skillet using 2/3 Clarified Butter, 1/3 Olive Oil and chopped Garlic, 1 clove per every 5 scallops. Heat Oil/Butter to Med Hi Heat. Toss in Garlic, cook 1 minute, add Scallops and sear 1 1/2 to 2 minutes depending on thickness and turn over for same amount of time. Sprinkle with fresh chopped parsley and serve. I sometimes cook up some shrimp and pulverize them into a paste consistancy, add some wasabi, mix it up and serve it as an accompanyment to the scallops. Gives them a little kick.

Very simple. Take 1/2 piece of bacon and wrap it around a scallop. Secure it with a toothpick. Add a slice of water chestnut if you have them. Drizzle butter or olive oil on the scallops. Add some fresh chopped garlic and parsley. Broil for about 10 minutes. If you prefer to deep fry them, same method, deep-fry for about 3 mins.

roll the scallops in fresh bread crumbs(fresh white bread in food processor)then wrap in bacon.they bake well this way
some times we make thousands. the crumbs really make a big difrence
you dont know they are there

Don't understand were the water chestnut fits into the scheme of things. Where do you put it??

I've had bacon wrapped water chesnuts. I think they also had bbq sauce.

The water chestnut does not actually add any flavor, just some "crunch". Kind of like the French "Coquilles St. Jacques" where the mushrooms and shallots give some texture to the scallops which if just served in cream sauce would be bland.

You don't wrap bacon around the circumference of the scallop in the manner of a bacon wrapped filet steak. Place a slice of water chestnut on top of the scallop then wrap the bacon around the two pieces to hold them together.

Thank you! Believe it or not, us chefs most of the time AGONIZE about food...no, too bland, no, too much chipolte, no, too much cilantro, too much BBQ sauce, not enough of this or that. Too much risotto, not enough crunch. I have spent countless nights thinking about food and what I can do better.

Fla "Bay" (or calico) scallops AND their lobster really mediocre, imho..they can also keep Stone Crab claws.. ..blechh..what's the big deal?
