Yikes! I've been meaning to get into a forum at some point, but never have. However, the subject of Mexican food in Connecticut - decent Mexican food, I should say - has finally gotten me going. For the most part, it doesn't exist, at least not in the north-central area of the state. That said....
Coyote Flaco is indeed great - not oversauced, not overcheesed, tasty, fresh, with good sauces - I have not traveled south either, but my husband and I cook from various very authentic cookbooks, esp. Elizabeth Lambert Ortiz, Diana Kennedy and our fave, Rick Bayless - and I can attest to the palty pickings in Connecticut once you've eaten the real thing and cooked the real thing, labor intensive as it can be.
Also good, but in a very modest way, is Monte Alban on Farmington Avenue in Hartford - fresh, nicely done, just not as flavorful as it might be.
