I know this is a long shot but I have to give it a try.

Somewhere in this wonderful database is a picture of a man chopping brisket on a very old butcher block covered in brown paper. I for the life of me can not find the picture and I had a question. On the right hand side of the butcher block is what looks like a bar of tan soap. What is it for ? Like I said it is like looking for a needle in a haystack and you may think I am nuts but I had to try.

Tan soap? Sounds like that nasty Fels Naptha. Anyone remember that stuff? Do they still make it? Ohhhhhhh, brisket. I shall help you seek now that my curiosty is piqued.

Could the "bar of tan soap" be, in reality, some kind of sharpening stone for his knife? (Haven't seen the photo, but a sharpening stone came immediately to mind when I read your post. Good luck.)

I'm with Kimchee ... sounds like an Arkansas Stone for sharpening knives and such !!!

My guess would be a wood handled flat-bladed thingie (scoop?) for picking up sliced brisket and carrying it to the scale for weighing. It's so dark in the room at City Market where you order, I don't remember seeing one, but I know they use something similar at Black's in Lockhart.

Can't really make out a blade on the thing, tho.

BTW, he's slicing, not chopping. Would be a serious foh-paw to ask for chopped brisket at a place like City Market Luling .

I third the sharpening stone idea. It was once a marble white/gray, now having had added a little smoke flavoring.

That is the picture!! and Hermitt4d I think you are right.
Now that you have pointed my brain in the right direction I can see it.
That makes a lot more sense then a bar of soap. Sharpening stone was a good guess I never even thought of that one.

You are soooo right! It's a wood handled metal scraper for both cleaning the choping block as well as transfering meat from the block to a plate or in this case butcher paper. You Win.... "The Booby Prize" (no jolks folks!) LOL
