Say cheese

A separate thread on Mexican food brought this question to mind. There's probably an easy answer...

I was at the deli the other day, picking up some sliced American cheese for my daughter. The counterman asked what I wanted -- white or yellow.

This immediately took me back to an obscure college memory, when my roommate and I went shopping for the first time and he freaked out when I picked up a package of yellow chedder cheese, instead of white. My roomie was a friend from high school, so it wasn't like we grew up in different regions.

What's the difference between white and yellow cheese? Is there a difference? What do you all prefer? I instinctively go for yellow, probably because that's what I grew up with. But, my wife buys white chedder all the time, and I never gave it the slightest thought until now.

Isn't cheddar cheese naturally white and they have to put coloring in it to make it yellow ?? I think I read that somewhere !!! I could be wrong !

Course my favorite for sandwiches is provolone !!!

And for regular eating .... anything stinky ! I really like stilton !!

"American cheese" is something made in a chemical factory and bears no relation to even the lowliest of Cheddar cheeses. The only use I know for the stuff is to make a strangely compelling grilled cheese sandwich of American cheese and sliced soft white bread
which, after grilling, should sit around for a while in a warm place (in a steam table if you are a school cafeteria) before eating. Wonderful!

And, yes, the yellow is merely artificially colored ( most likely to hide an off-color white ).

Anatto? And Stilton isn't stinky! A good port, some water crackers, and maybe a few figs. . . . Heaven!

My favorite pub in London serves a cheese known as "The Stinking Bishop."

All cheese is white unless it is colored. I toured the cheese factory to see how cheese is made. One thing Wisconsin knows is cheese.

You want to smell a stinky cheese? The answer is: Maroilles. Made in the town of Maroilles, France on the Belgian border. When you open the fridge it smells like somebody died in there but it's ohhhhhhh so rich and ohhhhhhh so good, with it's orange sticky rind. My friends in France once sent me one in the summer (BIG mistake) and my mailman literally THREW the package on the front porch and RAN AWAY. We fondly refer to Maroilles as "sock cheese" because even old smelly sweaty socks can't compare with this! I once dated a Frenchman that liked to eat Maroilles in bed but that's a whole other story......

And, yes, the yellow is merely artificially colored ( most likely to hide an off-color white ).

Actually, it's carotene, which the body converts to Vitamin A.  Even Blue Cheese (or Roquefort if you have more money than sense) is white, but the mold that makes it cheese is blue. For my money, the harder it bites you back on the way down, the better.
 
Why do photographers ask you to say "cheese" when they want you to smile? Ask anyone from Wisconsin or New York or Vermont. Just not from California.
