I'll tell you, I once thought that way as a young man. If you ever have the chance to sample some cabrito (young goat) off the pit at a BBQ in Texas, you won't go back to beef until the young goat is all gone - which won't take long. Good cabrito is like a smoked turkey leg, but with that silky smooth and sweet taste like a pork butt. Not gamey at all.
Watch all the old hands around the pit - it isn't brisket they're waiting on! You put this in a sandwich - it is essentially chivito.
Lord, I'm hungry for it now.
