Jim has a lot of choices, but for me, nothing beats a traditional hot dog with mustard. I would order the big Hebrew National dog. I like trying different types of sausages (reindeer, elk, etc.) just to see what they taste like. I could never see putting cream cheese or a lot of toppings people like on a dog or sausage. But after hearing people rave about the dog with cream cheese (My Schmiero) at Amazing Hot Dog, curiosity got the best of me. At home, I was making a few dogs for lunch one day and spread a little cream cheese on one of my dogs just to see what everyone was raving about. I didn't like it. Athough I'm open to trying new combinations, I stick with mustard usually or mustard and chili. Sometimes I'm surprised. Never thought I'd like a chili slaw dog, but I've been eating them more and more. Last night, a couple of Hebrew Nationals heated in water, then fried in a cast iron skillet, topped with mustard, Father & Son's chili, and creamy sweet slaw.

Congratulations, Jim. Would love to have a Biker Jim's in Jersey.

I have friends who were just in Alaska in AUgust (said next time they'd go in late July as it really started to cool down in mid- August)and they had reindeer sausage for breakfast. It was served on the buffet. They said it was "ok" but they are not fussy and they are not foodies. They don't go on a trip and plan it starting with where they will eat...Like I do. They are probably better off. They rarely get disappointed..They also make great dinner guests..Easy to please

Having dined with Biker Jim on one of his Chicago/Hot Doug's forays, I can tell you he's the real deal. His stand is at the top of my Denver list - if and when! Listening to him and CSD and Hot Doug talk sausage - WOW! It was some kinda class. Only one missing was John Fox...tht would have completed the bridge table. Congratulations to Biker Jim on one moe accolade...very deserving.

I too have had the pleasure of breaking bread (ie Rocky Mountain Oysters and Beef Cheek Burritos- Hey only in Denver!) with Biker Jim.
Although I didn't have a chance to check out the exotic game sausages while I was there, it will certainly be on my list when I return next summer.

I am a bit of an insomniac and just now got a chance to read this post. This seattle guy is way more than generous. Thanks for the kind words everyone, I am kinda humbled by this sort of attention. I'm also way lucky to be doing what I'm doing. What I get to do is hang out all day shooting the bull with lots of people and when I move my hands they give me money. Who could ask for more?

That is a GREAT review. It makes me want to fly out to Denver just to get a grilled reindeer sausage with cream cheese and Coca-Cola-sauteed onions. (well, maybe when it warms up a bit)

I actually like to refer to the onions as "Speed Caramelized" Sauteing just sounds weird to me. As for the guy in Seattle, no I don't really know who he is. He was exceptionally nice to me though. And yeah, burning dogs in 95+ heat can be a task. I'm just lucky people will endure the heat long enough to get a dog or two. Of course now that we're getting some 40 degree days I can think back longingly to the shorts and t-shirt weather. Oh wait, that was just last week as the temp was 78 Tuesday. And then of course the high was 35 Thursday. No figuring Colorado weather, beats Alaska though!

Great article. I wish you would start up a franchise in my town. Those speed-caramelized onions sound good. Can you elaborate a little on your method? Must use butter or something besides coke, right?

Regarding sauteing sounding weird I live in Wisconsin (Packers/Brett Farve), and took a trip south a couple of years ago. One obligatory stop was Kiln MS, Farve's hometown. We found a walk-up drive-in and ordered some burgers and ate at a picnic table under a tree. The owner took a break and sat at the next table. The burgers were excellent, and we told him so, and I mentioned what a nice surprise it was to find both raw and fried onions. First he looked confused, then he said "Fried? Oh, you mean sauteed." And I remembered that fried is a whole different thing down there.

I am *so* hungry now! The Jalapeno Elk Brat and Red Hot sausages are calling me. Unfortunately I'm moving to Seattle this month, not Denver, lol! I do have family in that area though, so I know where to go if I visit any!

Our best friends and next door neighbors along with my wife and I were in Denver during the DNC, we encountered Biker Jim's while strolling down the great 16th Street Pedestrian Mall in Downtown, we tried 4 different dogs, all good. A few months ago I had to return to Denver and tried them again, still tasty. I have a friend who works at a jazz station in Denver and he was the one that told us about it because they advertise his stand

Looks great and people seem to be super passionate about the stand, especially chefs, who seem to hold in Jim's in high regard as the ultimate non-trendy gourmet hot dog / sausage stand.. hope to get there myself one day!

So Hkrall, you write the cool hot dog blog for serious eats?  I love that column.  And thanks for the mention.  My buddy in Alaska, M.A. got me started in the hot dog biz.  I spent a couple of days working his cart there.  Any time I get a little cocky about being a cool hot dog guy I talk with him.  He rocks it big time, and would make an interesting choice for your street food column.  Thanks again for the mention.
