What Cut of Steak Does it Best on a Grill? Thu, 04/3/03 11:28 AM (permalink)
For me a thick cut Porterhouse, about 1.5 inches or roughly 1.75 lb seems to work best for a great steak. My wife loves the filet, and I get the 'left' side strip. Very light or no seasoning prior to grilling. Dinner for two.
If you could (or do) choose your favorite cut to grill, or order when on the road, what would it be?

        We had NY Strips the other night and my husband topped his with crumbled cabrales (strong spanish bleu cheese).

          The Mayors choice was excellent and in addition, I really like the ribeye primarily for the marbled fat.

            I like the ribeye and the NY strip cuts the best (but I will take whatever I can get)

            I like to marinate in Worschestire, olive oil and red wine with some salt, pepper and garlic. Then GRILL to a medium rare !!!

                  Any of the above, and I'll add korean marinated flank steak (bulgoggi) and London broil marinated overnight in olive oil, vinegar, salt, pepper, and lots and lots of garlic. We also like aged NY strips topped with seasoned garlic goat cheese.

                    The Mayors choice is still mine but the question is: Can you age steaks and other choice meats in the frige? How does the mayor know about all these places? It seems he has been every where

                      My preference is for a strip, cut two-inches thick. I marinate them in garlic, black pepper, olive oil and white wine.

                      I also enjoy flank steak, about half an inch thick. I marinate these in garlic, black pepper, cumin, ancho chili powder, olive oil and white wine.

                      My grandson's preference is for a 2 1/2-inch thick porterhouse, marinated or not -- just serve it, please. He'll be 15 next week. He's a 6'1", 180 pound, rapidly-growing football player. Just last week he ate his porterhouse and a strip, along with roasted potatoes and spinach sauteed with garlic and olive oil.

                      With all three cuts I grill them barely past blue.

                          Every Flank Steak I have ever had- Mother used to do that cut often- was not grillable. It was soaked (the old word for marinated) in who knows what and cooked for a fairly long time...usually stuffed with something.

                            I actually grill flank at a very high temp (500+ degree) and cook it for four minutes on a side. Marinades with red win, garlic and onions work very well.

                              Here's two of our current favorites:

                              Make garlic butter by gently warming 1/4 stick sweet butter. Add one clove smashed and chopped garlic. Warm for 5 or 6 minutes to infuse the butter but don't saute the garlic. Schmear on a salted and peppered boneless sirloin (both sides) and grill to medium rare. Trim the fat and slice thin and serve on lightly toasted Levy's seedless rye, topping with more garlic butter.

                              Or, a nice thick round London Broil marinated in Stubbs Marinade for an hour or so. Grill and slice it. Great crust and flavor. During son's family's last visit, we had some left over. The next morning, I sliced it very thin, cold. Grandson (6) and his mom finished off close to 1/2 pound, smacking their lips.

                              Daughter only eats beef well done. (Where did I go wrong?) She does enjoy the above London broil med-well and loves the flavor so there's hope yet.

                                I enjoyed the comments on flank, but it appears that you have to work to hard to make it work. I am going to stay with the "Mayors" choice of porterhouse and mine with ribeye with lotsa fat marbled.

                                  For me, take a 2" ribeye, coat with a mixture of coarse sea salt,little onion powder,little garlic powder,freshly ground black pepper and sear over high heat. Finish in an oven till desired (medium rare is best) Most importantly let it rest for 10 minutes. This allows the juices to flow back into the outer reaches of the meat. When you cut you won't get a pool of lost nectars. Red wine or good lager is essential for further enjoyment. Oh and start with a good product, AAA Canadian or US prime. Great food begins with great ingredients.

                                      For me, hotel cut KC (not ny) strip about 1.5" thick, ground black pepper only, cooked medium rare. A little Stubb's as a dip is great. Texas beef skirt, marinated with chili, lime, beer and garlic also floats my boat.

                                        For a half-inch thick flank steak I give it five minutes on each side on the grill for a touch more than rare. For medium rare I'd go six minutes on each side. So long as you slice it thinly, across the grain, it is very, very tender. Slicing it with the grain results in shoe leather.

                                              Porterhouse, cut to a Fred Flintstone 3 inch thick !!!
                                              Cooked over Lump Charcoal, seasoned only with coarse salt & ground black pepper.
                                              Carmelized on each side, transfered to cast iron skillet and finished in a slow oven.
                                              Still rare next to the bone, medium rare towards the tail, crunchy crust

                                              Of course that steak will feed four adults
                                              Sliced for everyone to get a strip & filet piece
                                              topping ? Compound Butter or Bernaise ?

                                                I recently began using Cook's Illustrated's method, which involves a long marinade of your choice (I usually make a paste of shallots, garlic, olive oil, lemon juice, salt pepper, and LOTS of fresh herbs in the food processor), followed by a short sojourn on a hot grill; no more than 5-7 minutes a side. Then set it aside to rest for fifteen minutes, covered by foil. Sliced on the bias, very thin, it's excellent eating. The leftovers are even better the next day in a composed steak salad.

                                                      Has anyone tried "Fred's Steak" from Schaub's Meats at the Stanford Shopping Center in Palo Alto, CA? The steak is excellent because the marinade is so good -- very robust in flavor so it keeps up with the richness of the beef.
