WSM Smoke Day V - Presented by Roadhouse Bar-B-Que Sauce - Mon, 05/4/09 8:30 PM
0

The big day is almost in sight and I am beginning to smell smoke.  My annual barbecue bash is set for May 23.  It runs from 2:00 until dusk.  Buddy is supplying the sauce again and is actually taking off from selling sauce to attend this year.

About WSM (Weber Smokey Mountain Cooker) Smoke Day.
Here's a little history...back in 2005, one of our members, Joel Kiess, suggested that everyone should barbecue with their WSM on the same day. Then, we'd all post descriptions and photos of what we cooked here on the bulletin board. We held Smoke Day I on May 28, 2005 and we're now in our fifth year.

Smoke Day is a great way to celebrate a lot of things...Memorial Day weekend, the beginning of summer, National BBQ Month (May), and the fun and enjoyment of WSM ownership!

New this year

My dear wife is baking pies for dessert.  Over 3 dozen of them!  She tested a new crust yesterday with a Granny Smith and blackberry filling.  Dang!  That was one of the best pies I have every eaten, both the crust and the filling.  She said that the apple-blackberry pie is not on the Smoke Day menu.  Someone needs to persuade her to change that decision.

Last year's entertainment will not be able to attend (XI Lives has a paying gig), but I expect a guest appearance of The King and we plan on Karaoke.

The Smoked Goods

Coming out of my smoking pit are the following:

Appetizers - Redneck Sushi, BBQ meatloaf, Atomic Camel Turds, and possibly more.

Entrees - Brisket, pulled pork, pulled beef, spareribs, back ribs, hotlinks, BBQ chicken, smoked turkey drumsticks, and a partridge over pear wood.

Let me know if I missed anything.

Nothing in life is free

Your cost, one of the following:

1. A homemade side dish to share.*
2. An appetizer to share.
3. An adult beverage to share.
4. Sing for your meal.

The choice is yours.

Roadfooders are invited, send me a PM for directions.

See y'all on May 23.

*Be forewarned.  Store bought side dishes will go straight in the trash, and be the cause of ridicule and forced Karaoke.

Yay!
See y'all there!

I'll most likely be bringing my Muffuletta Salad again, if nobody minds the same thing two years in a row.

Oh - and I have been DROOLING over both the thought of the pies (PLEASE make the apple blackberry!) and the Atomic Camel Turds.

My new 18 inch with the built in thermometer is out on my patio.

I've modified it,  but haven't used it!

I'm so nervous!

Thanks for the plug Jim.  You know I do it for the love of the smoke, not the publicity, but I'll take it anyway.

I'm thinking about bringing an elotes casserole as a side dish.  I brought this same dish to last autumn's LTHForum picnic and it was a huge hit.

Either that, or maybe I'll stop at Kopp's and pick up a gallon of vanilla for a little ala mode for Bobbi's pies...

Please Please Please Please Please Pretty Pretty Pretty Pretty PLEEEASE with a case of Rock & Rye on top? Please make the Granny Smith Blackberry pie? PLEEEE HEEE HEEEASE?

Granted, I might not make it before it's all gone, but dammit, to even have the chance. *sigh* All her desserts are good though. Mmmmmm, those little chocolate tarts she put in the freezer & then took out & the texture had changed for the better. Mmmmmm, those custardy things with the fresh strawberries. mmmmm

Ok, I am coming & will bring the only thing Paula Deen has never deep fried--Corn, Tomato & Avocado salad....y'all!

Sounds absolutely fantastic. There's a special place inside of me for pies, so I'll gladly volunteer to try out any of the concoctions coming my way. I have no idea what I'll bring, but it'll probably be some kind of app. Maybe a homemade bacon-wrapped pate with crusty bread? Or maybe beef empanadas? Not sure, but I'll figure it out soon.

I have it on the calendar, and I'm thinking some type of home-made slaw to go with all that BBQ...I'll let you know the family count closer to the event...

Muffuletta Salad - I loved it last year.

Elotes casserole - It's a hit!  I can't wait to try it.

Corn, Tomato & Avocado salad - We made something like that last year and forgot to serve it.  One less thing for us to prepare.

Bacon-wrapped pate with crusty bread or maybe beef empanadas - Watch out, I may load them in the smoker.

Home-made slaw - Good, we are skipping our slaw this year.

mar52 - Don't fear the smoker.  Smoke a butt for Smoke Day (they are foolproof) and invite your friends and neighbors.  You will have a blast.

I'm thinking I'll go with something lighter instead--something like gazpacho or ceviche.

This is a request to everyone planning to attend the wonderful Smoke Day party...
One of my sons is doing a service project for his Bar Mitzvah that is a toy drive for Children's Memorial Hospital, where he had some surgery as a baby.
He is collecting toys for the children who are in treatment there.
The toys do not need to be expensive, but they need to be new so they do not pass on germs, etc.
They can be inexpensive, matchbox cars, coloring books, craft kits, rattles, etc.
They also ask that any DVD's are rated G, PG or PG-13.
The kids often get to pick out a "prize" after an especially difficult procedure or round of treatment.
I thought if anyone wanted to bring a toy along for his collection project he is going to be there and it could be a good opportunity for him to gather up a few more donations.
Thanks, and we look forward to seeing you all there-
We are keeping our fingers crossed for good weather!

I'm going to try and post the flyer he made but it's not showing in preview- if it doesn't work-oh well-the details are above...

It is with great, great sadness that I come here to give my regrets.  After checking my calendar at home, I realized I have a wedding to go to on this day.  I'm sure the food will be atrocious, the company dull and the music unbearable.

Brad, I kept my promise. I brought back a load of country ham from North Carolina ( slices sized for ham biscuits ), and I'll be fryin' them up and bringing them as an appetizer.  Looking forward to seeing y'all.

What's the deal Alice?  You've got to start taking better care of yourself girl so you can be healthy enough to join up with us sometime soon.

Well, heal up quick and start saving your nickels so you can hop a plane up north to see your old friends.

We are starting the final countdown to Smoke Day.  The meat is being defrosted, pie shells baked, and jello shots concocted.

I've finalized my menu of meats (pay attention, there will be a quiz) - 4 pork butts, 3 racks of spareribs, 2 beef briskets, 3 three pound packages of hot links, 6 racks of back ribs, 1 chuck roll, 3 six pound packages of chicken pieces, 1 turkey, 12 turkey drumsticks, 3 smoked meatloafs, and 4 redneck sushi's.

The Quiz - Guess how many pounds of meat I will be cooking (starting weight).

The Prize - First choice of pie to the closest guesser.

I'm thinking of some phyllo spinach and cheese triangles with Nueske's bacon. I've never made them before but if anyone enjoys pork in general and bacon in particular and Nueske's bacon for bacon, I'll try it. Anything tastes better with bacon.

I'm guessing 137#
Good lord, what if I'm right?
That's a lot of meat.
Do we have to finish all the meat before we get dessert?

No.  You just have to clean your plate.

The bacon & spinach treats sound great.

You can guess all you want as to how much meat Jim is starting with.  More important to me is how much will be left when the sun goes down Saturday night and the Roadfood vultures have had their fill?  I'm thinking there will still be upwards of 30lbs., combined of all meats, bones, and fat.

Not that much really when you stop and consider that even if Jim starts with 200lbs. of raw meat, 50% or better will be water weight that will be cooked off during the smoking process.  That leaves 100lbs. or less to be consumed by roughly 40-50 people over the course of about seven hours.

I dunno Jim, maybe you should throw on an extra couple of slabs so no one goes hungry on Saturday.  Or at least to make sure that you and Bobbi have a few leftovers Sunday morning...

FYI- I just checked, for all us Illinois types, Kopps flavor of the day for Saturday is
Cherry Amaretto Cheesecake (YUM) and
Choc Chip Cookie dough
Throw that cooler in the trunk....
wait...it's already in the trunk....(what DOES that say about me?)

Well, I hope everyone had a good time.  While you were eating good stuff up there, this is what I had:

That is chicken breast, with cooked-to-death cilantro, potatoes with chopped bacon and green onions (not nearly as good as it sounds) and carrots smothered in a honey-esque glaze.  You could practically taste the corn starch.  It was like the first meal made by a misguided teenager- "sure, we'll throw all this together, it will be good."

*Sigh*

She might get one of the pie care packages sitting in our refrigerator.  I haven't yet decided what I'm going to make her do to earn the pie.

Here is a taste of our menu, Redneck Sushi was set out early and went very fast.

That was one of a very few pictures that I took.  You'll see many more pictures after MFL comes by to pick up his camera.

To all interested parties, this simple to make Lemonade Pie is drop dead amazing (as were all the pies for that matter.  And the 'Que, too!)!

Bobbi said her greatest reward was watching all of us as we entered the kitchen from outside and seeing our jaws drop at the incredible array of pies laid out before us.  I'm sure there will be pictures galore in the coming hours and days ahead.  Pay attention.  You won't regret it.

I'm having problems posting in Roadfood today so I guess I'll just post a number of pics w/o descriptions.

Atomic Camel Turds, which I believe (Jim correct me here if I'm wrong) were almonds stuffed into a date, stuffed into a Serrano pepper and wrapped with bacon and then smoked.

Great pics, thanks for posting. (I dummy-slapped myself on the way home for not bringing my camera.)

The Pitmaster and Piemistress did some amazing culinary things yesterday, and perhaps (as another attendee pondered) broke a record or two. The 'cue and the pies were fabulous, and the apps and sides, too. It was great to see/meet so many people, including many roadfooders. An awesome bunch of people!

When I am on my death bed......surround me with pies like that and I will die a very happy man. Maybe with a stomach ache but with a big smile on my face! Oh and a glass of milk too. Thank You in Advance!
By the way sure beats the hell out of the assisted sucide law..... LOL Big Glenn

Mmm, had bites of all the pie that was sent home!  It was all really good.  I think my favorites were the strawberry daquiri and the lemonade one. Wonderful!  Thanks for sending them home, and the BBQ, too!

What an unbelievable feast! Thanks again for all your hard work. After 24 hrs of rest, I am again able to eat. (Although I admit to eating some great leftover pie for dinner last night)

Huge thanks to Jim and Bobbie and everyone else that brought all the wonderful food.
Everything was great - even the weather pretty much cooperated.

Many thanks, Jim and Bobbi, for one of the most enjoyable afternoons I've spent in a long time. The food was great and the company even better. I was simply blown away by the sight of those hundreds of pies ( well, it SEEMED like hundreds! ) that greeted me in the kitchen. A special "thank you" for introducing me to the wonders of key lime pie... and a tip of the hat to Buddy Roadhouse for dragging me away from the chocolate pies long enough to give it a try.

after MFL comes by to pick up his camera.

That ^^ cracked me up. Sorry for my absence, there was an unexpected side excursion to our day that prohibited me from attending. Jim got ahold of me though & I was kind enough to "help" them eat some leftovers today.

I've finally recovered --that was a lot of meat! I got the last Atomic Camel Turd. It was awesomely hot. I got some pulled beef that I immediately doused in white BBQ sauce (thanks, Brad!) It gave it a very interesting intense flavor & the smokiness of the meat really sent it over the edge. I doused the meatloaf in whatever was in the glass vase on the counter. Mmmmmmm.

As for the pies--WOW. There was this sugar cream tart, OMG. I almost licked the plate between that one & the raspberry lemon. Then came the chocolate pies & the nut pies, AND THEN the chocolate nut pies.

If having 9 slivers of pie is wrong, then I don't want to be right.

We were so happy to see Stricken and a few more Saturday absentees arrive today for their own Smoke Day.  We had to microwave the meat, but enjoyed a second Smoke Day nonetheless.

My most interesting friend Fat Sal has posted his review of the event and some pictures at his blog.

Stricken, I wondered what happened to you! I thought maybe you decided you didn't like apple-blackberry pie after all.... But I'm glad you made it on the next round.

I love Sal's blog. I hate it when hotels don't have fridges, and I hate it even more when they do have fridges that are loaded full with $4 bottles of water and $2 candy bars....

Thanks, Jim and Bobbi, for the fabulous feast. You guys are awesome!

Thank you so much to Jim and Bobbi for really starting off the weekend right and turning it into a true holiday.  It was great to visit with so many old friends and make some new ones.  But I haveto say that the look on my son's face when saw all those pies was....priceless...

Thank you so much for genosity and a great and fun day.

We have a family reunion every year on the same day. Trust me, the food @ Jim & Bobbi's is 1000x better!!!

Thank you guys so much for doing this, this was a perfect way to cap off the weekend. I love the new addition to the kitchen & let me know if apple blackberry will be showing up @ any competitions this year.

So next year bring your family!

I'm glad you liked the white sauce but to give proper credit I must point out that the recipe is from Steven Raichlen's book "BBQ USA".  While it's supposed to be for chicken it's actually quite similar to the sauce used for pit beef elsewhere in the book.

It was a fun day and my hands still smelled like smoke Sunday morning.

So did anybody else brave a sip from the mason jar?
Brad
