Breakfast skillet recipe?

That breakfast skillet on the home page today (66/22) really looks good. Anyone have any ideas on how to make it at home?

I was a kitchen manager for Village Inn in Denver around 85-86  They were one of the first to offer a skillet breakfast.  I was able to have some input in the R&D phase ad I worked with their test kitchen at the Co. headquarters in Denevr.
They used a metal skillet(the type used for fajitas now).  They would take the southern style(cubes) hash browns that were deep fried crisp and seasoned.  Then it was topped with meat then an egg of choice and varoius sauce.  They had Italian, Mex, rancher and southern.
 My freind used to pig out on the belly buster at TJ's Country Place in Columbus.  The had homefries topped with bacon, ham and sausage.  Topped with your choice of eggs  than was covered with sausage gravy..
The kind pictured here would be my favorite.
I would dice up some cooled cooked potato and fry them up with onion til nicely browned.  Just before they browned I'd add a handfull of diced ham, cooked bacon or sausage(maybe all 3)  Then turn on the broiler.  Take a lightly oiled pie tin or cookie sheet(for bigger quantities) and make an even layer of the pot mix.  Next cook your egg as you like it(if you dont like over cooked fried eggs Id pull the egg after it had just set on both sides.   Place your egg on top of the potato and cover with shredded cheddar or jack cheese and place under broiler until the cheese melts and browns.  Use a large spatula and transfer to a plate.  That way makes doing breakfast for a big family a snap.
One more way would be to scramble off some eggs..  Then do the pot, onion and meat as before and fold the scrambled egg in at the end..  Coat the whole thing with cheese and put under the broiler.

Two biscuits, two eggs, country fries, all on one plate covered with country sausage gravy.

Thanks very much, Britt! Good information there. I've made Farmer's Breakfast many times where the eggs are mixed in with the potatoes, onions, meat, etc. and cooked until the eggs are done - my eggs have to be scrambled, I don't do runny egg yolks at any time. And I like my sausage gravy over plain biscuits the way nature intended them.

Michael, we used to eat aroud the corner from you at the TeeJayes on Hamilton.  Its been years and my friend used to call it the belly buster.  Its been 12 years since Ive been in the place.
He usually brought one to work  in a carryout box.  By that time it was really well mixed!  By the time he got to work, I swore youd need a putty knife to get thru the gravy.  That stuff really tightens up when it cools.  I remember one time when we ate in.  We had an extra bowl of sausage gravy.  You could lift it up with the spoon!. I thought they put meat in with it as an option.

Farm Country Eggs
4 slices bacon, crisp
2 tablespoons butter
2 cups hash browns
1/2 cup chopped onion
1/4 cup chopped green pepper
6 eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon basil
Dash pepper
1 cup shredded cheddar

Cook the onion, peppers & hashbrowns.  Mix eggs, milk, salt, pepper & basil and pour over.  Cook stirring occasionally.  When nearly set add cheese & crumbled bacon.   can also be done in the microwave: Place butter, onions, green peppers and hash browns in 1 1/2 quart microwavable casserole dish. Cook uncovered 3 minutes on high; stir, mash down and cook 3 minutes more. In separate bowl mix eggs, milk and seasoning. Pour on top of cooked mixture. Cover and cook at 70 percent power 5-7 minutes or until eggs are set; stir. Sprinkle bacon and cheese on top. Cook 30 - 60 seconds or until cheese melted. Can substitute sausage or ham.

Corned Beef Hash Breakfast Pie

9-inch deep dish pie shell, single crust, partially baked (see below) 

3 large eggs 
1/3 cup mayonnaise
1/4 teaspoon garlic powder
1/2 teaspoon seasoning salt 
1/8 teaspoon ground black pepper
1/3 cup diced bell peppers
1/4 cup diced fresh onions or dehydrated onions
4 cups frozen hash browns or tater tots, etc (thawed, crumbled) 
1 (15 ounce) can corned beef hash, crumbled 
1 cup shredded cheddar cheese

Heat oven to 425 degrees F. 

Place pie crust in oven on the lowest rack; bake 7 minutes. Remove from oven. 

Reduce temperature to 375 degrees F. 

In a large bowl beat the eggs, add mayonnnaise, garlic powder, salt and pepper, blend well. Add the thawed, crumbled potatoes, crumbled corned beef hash, diced onions and diced bell peppers to egg mixture, mix well. 

Spoon potato mixture into partially baked crust. Level off mixture in pie crust. Cover the edge of the crust with a pie crust shield or aluminum foil strips. 

Place pie on the lowest rack in the oven. Bake 55 minutes at 375 degrees F or until potatoes, onions and bell peppers are tender. 

Turn off oven, remove pie from oven. 

Sprinkle with 1 cup of shredded cheddar. 

Place back in oven for 5 minutes, or until cheese is melted. Remove from oven and let set a few minutes before 
slicing. Ketchup on the side works well with this.


Easy Wesson Oil Pie Crust 

2 cups sifted all-purpose flour
1 1/2 teaspoon salt
1/2 cup Wesson oil (canola oil, corn oil, any neutral oil is ok)
1/4 cup cold whole milk

Sift dry ingredients into bowl. Pour oil and milk into one measuring cup, but do not stir. Dump into flour mixture; 
mix with fork until cleans side of bowl. 

Form into ball and roll between out between two pieces of wax paper.

Or just place all of dough ball in 9-inch, deep dish pie plate and press it into place with your fingers or the 
flat bottom of a drinking glass.

Makes enough for pie crust one 9-inch deep dish single crust pie, or one 8-inch two crust pie.

Eggs Grand Ecore 

Spread the bottom of a medium cast iron skillet with one-half stick of butter. Cover this with grated cheese. Break eight whole eggs upon the cheese without breaking the yolks. Season with crushed red pepper, cayenne pepper and salt. Pour a small amount of cream on top of eggs. Strew 2 ounces of grated cheese on top. Set in a moderate oven for fifteen minutes or until done...Russ

Do you melt the butter or just glob cold butter on?

Room temperature butter like you would when preparing a cake pan. Just like using a big crayon. I have used a harder mozzerella, provolone, and mild chedder. Each worked great. Real soft mozzerella is tough to grate. Watch the eggs when cooking to get them the way you like. And don't break the yolks...Russ

Homemade Chorizo and Scrambled Egg Breakfast Wrap with Cheese and Salsa

1/4 lb to 1/2 lb Homemade Mexican Chorizo (recipe below)
2 eggs, beaten
2 Tbsp butter
2 flour tortillas
Shredded cheese
Tomato Salsa

Fry homemade Mexican Chorizo sausage meat in skillet until done. Set aside until required.

Scramble 2 eggs in butter. Set aside until required.

Heat flour tortillas in skillet until air bubbles expand in surface of tortilla and tops of air bubbles
are slightly browned.

Spoon cooked homemade Mexican Chorizo sausage meat and scrambled eggs into warmed tortilla.
Fold or wrap tortilla to close and serve warm.

Serve with shredded cheese and / or tomato salsa.

Homemade Mexican Chorizo

1 lb ground lean pork, ground turkey can be substituted
1/4 cup cider vinegar
2 tablespoons chili powder
1 tablespoon sweet paprika
1 teaspoon ground cumin
1 teaspoon table salt
1 teaspoon garlic powder
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano, crushed
1/4 teaspoon red pepper flakes
1/8 teaspoon ground cloves
1/8 teaspoon ground black pepper

Combine chili powder, paprika, cumin, salt, garlic powder, coriander, 
oregano, red pepper flakes, ground cloves and black pepper in mixing bowl and stir until well combined.

Add cider vinegar and stir until dry ingredients are moistened.
Add ground meat and knead until spice mixture is well incorporated into the meat.

You can use the chorizo immediately, but for best flavor development, 
place chorizo mixture in an airtight container and store overnight in fridge.

Form chrizo meat into small patties or just scramble and fry the meat in a skillet until done.

Use within 2 or 3 days. May be frozen.
