Need Help: Oklahoma to Colorado via TX & NM

Hey, guys, I'm a frequent reader, but sparse poster.  I need some restaurant recommendations - we are taking a road trip from Oklahoma City to Colorado.  Staying at a cabin right outside Salida.
 
Are there any neat places along the way?  We are going through west to Amarillo, then up through Clayton and Raton, NM and through Trindad, CO to Salida.  I know that's not much to work with, but if you know of any hidden gems, they would be much appreciated.
 
Also, anything around the Salida/Buena Vista, CO area would be good to hear as well.
