Are any of you folks using Ro-Tel when making your own chili?

Only use Ro-Tel when mixing with cooked crumbled sausage and cheeses to make a yummy dip.

I use a couple of cans along with whole pack tomatoes, but I have no recipe. Just somma dis and somma dat.

And pinto beans.

One of my favorites, which I almost always make, is Whistle Stop Cafe Chili, from Jane and Michael's "Chili Nation" cookbook. It uses RoTel and is just great.

I use a can,drained in my chili.  1" pieces of beef roast, salt, gephardt's chili powder, onions, bell pepper, a chili in chipotle, and beef broth.  Nothing else.  Beans on the side and crackers or corn chips.  Maybe a little cheese.  And beer.....

I like to fry up bulk sausage with a can of Ro-Tel, drain off the fat then add eggs and scramble the whole thing and roll it in flour tortillas with cheese for a quick dinner.

I tend to favour more vegetarian meals, so mix Ro-Tel with a loaf of Velveeta. Heat the tomatos, add the cheese, cook slowly.

Sooo good with crudites and of course tortilla chips!
