 Going To Start - How much time and other ???

I have been a lurker here for the last month or two and I have decided to invest in a cart and do this as a part time gig on weekends at fairs, car shows etc etc. If this part is successful, I plan to do this full time from May to November and take Dec - Mar off (weather).
 
 This place seems to be a wealth of knowledge and I have gone through MANY MANY threads.
 
The one big question I have that I have not found a clear answer to here or from my health dept is a list of what they require. Like with most things in NYS they are very ambiguous and evasive when it comes to answering question upfront and clearly.

Does anyone have an idea of where I can get a definitive list of the regualtions?
 
I appreciate your help and I am looking forward to my first day. I am already booked for a fireman's picnic and a battlefield re-enactment. Both are in early May 2010. AND I DONT EVEN HAVE THE CART YET!!!

    Find out the name of the inspector that covers your area. Contact them, make an appointment for a face to face meeting. Lay out your plans and ask for their opinion. You will get the answers that a health department website and the person that answers the phone can't give you. An intelligent discussion will get the inspector in your corner, and you will learn a lot. It certainly helped me.

      talking to your inspector is absolutely the best way to get the bottom line.  just make sure you stay flexible about what they say.  a different inspector may visit you soon and tell you a completely different story.  these are clearly times for state revenue building.  don't think for a moment that your health inspector is not a victim as well.  many states ARE actively looking for those $250 fines.  the olden days are gone! 

      talk to your inspector and mind your Ps & Qs

                I live in Texas and had to get Food Manager Certification first
                took about 2 month after I took the test.Then I recieved my certification
                We have a stationary Concession Stand
                Got my Business License  and trust me there don't tell you to much from the State here.And I believe it is the same in New York.
                But there look what you need and then there tell you the Violation. 
                You have to read your Rules and regulations and then make the stand to the standard of your State
                Is not as easy.But if you get used to the rules is not that hard either
                It got  more strict .
                And no Inspector came unless I was ready to open.And I found that there don't tell you anything you have to research all first.Have a nice day
