When I was in Mexico last month, I had a seafood ceviche and it was awesome, but I'm not entirely sure, actually I'm totally sure that I have no idea what a ceviche is.
Can someone explain this concept to me?
Ceviche is nothing more than a citrus marinated seafood salad. Any citrus juice or combination of juices can be used, along with some salt, to marinate -- actually to virtually cook -- the fish. Some ceviches (it's also spelled seviche) include chiles, onions -- that sort of thing. I've made ceviche with scallops, yellowtail, dolphin an marlin, among other fishes.
