Yesterday, I was surprised and pleased to see lake trout filets on sale at our local fishmonger's, Gadaletto's. It has been years since I've had that delicious fish - they are just never offered in local markets. I had gone to the market in hopes of finding some shad and roe, but none were to be found. We lined a wire grill basket with sorrel from our garden, laid the filet skin side down on the sorrel, sprinkled a bit of salt and pepper, a sprig of fresh tarragon, a few sprigs of chives, a few lemon slices, and a dash of olive oil. covered the whole thing with more sorrel and grilled it for 10 minutes. The filet was sweet and moist and tasty - something like a very mild flavored salmon. Cheers, John
