TJ, we still love you. Truth be told, In Philly where, at least at 9th & Passyunk, they serve sliced ribeye, not the chopped into little pieces that other places serve, and everyplace in Baltimore, I add only ketchup, and a few drops of hot sauce, more will melt your brain, to my provywitextra.
In Baltimore, ordering a cheesesteak will really get you a cheesesteak hoagie, meat chopped into little bits, on a lousy roll, with lettuce, tomato, mayo, hots, and fried onions. Adding the ketchup to one of these mixes it with the mayo and you sort of end up with what I've always known as russian dressing, and it makes a great drippy mess.
Growing up, my mother always made this russian dressing, and mixed in some relish, which then made it into Thousand Island. That's still my favorite dressing. She also served us plain spaghetti to which we always poured on ketchup. Today I can't even imagine eating it that way. I guess you figured out I'm not Italian.
