Between the eye socket and the upper part of the mouth (maxilla bone?) there is a chunk of muscle for working the jaws. Asian cultures consider this a real choice piece of meat. Nearest thing I can compare it to is the "oyster" muscle near the thigh-hip socket.

Walleye is a good-sized cool/cold water fish found a lot in the Great Lakes and surrounding area. The fillets are wonderful prepared as many 'white-meat' fishes are. Our local Culvers FF stand has Walleye Sandwiches and dinners about 4 months of the year, and many of the famous fish-fries held up north serve Walleye. It is very good eating fish.

Just about every restaurant in Minnesota serves walleye. Most all of it comes imported from Canada since there is only one commercial fishery in the United States at the Red Lake Indian Reservation in Minnesota. Sander or Zander is imported from Europe. Minnesota had a controversy about that a few years ago and now no restaurant will dare server Zander and call it Walleye on the menu. Most are honest and say Canadian Walleye.

Those six Oysters, each with a mini-crabcake (stuffing?) broiled on top make a good lunch entree, or a fine appetizer-for-two! G&M does it right.
