Severed Crust & Juices Flowing

Today's description of one's first bite of steak at John Thomas in Ithaca struck me as being 
not delicious. Am I they only one weirded out by this turn of a phrase? :)
Steak sounds good, severing doesn't.

I thought the verbal description differed from the visual image. The photo looks like a thin-cut T-Bone.

And I thought that the juices should stay INSIDE the steak- not be all on the plate- that meat needs to rest after being cooked......really Michael....we would be expecting better from you, of all people!

There is no tenderloin from what I can see.  Looks more like an L-bone than a T-bone.  So it's a bone-in strip or bone-in shell steak.
 
I wouldn't think "juices flowing" would be a compliment to a steak.  But I suppose if there is more "juice" left in the steak then it could still be good.

Actually   the steaks there are awesome.......................this was  just not that  great a picture.  Oh well,  at least it has not beem chewed on!

30 smackers for THAT steak is indeed expensive. I liked the look of the fries and onions.
