Indeed, if I can't make something from scratch better than out of a can or mix, shame on me. The brisket is wrapped as soon as it's taken from the smoker, I use the pure gelatin it releases as it cools, season it, use cornstarch for thickening. sometimes I do need to thin it with a little beef broth.

Looks terrific. Can I have mashed potatoes, though? With gravy on them?
I've never thought of smoked brisket served that way. Great idea!

Same here with the mash & gravy... I do open face RB sand evrey once in a while, sells out quick.
2 slices of texas toast, plenty of mash, 6-7 oz thin sliced roast angus sirloin, lots of gravy from the pan drippings.

I normally would like mashed potatoes with butter, but I'd like to try the fried potatoes with sausage and onions.  Never had that before, and it sounds killer.

I don't know about where you were in New England 50 years ago, but where I was in New England 50 years ago it was called a hot roast beef sandwich.
 
Want a weird name for it? Around here they call it a split. I have no idea why.

Mc Cutcheon's Cherry Cider, McCutcheon's is a local Jelly, Jam, and anything else that can be bottled vegetable wise, they are terrifically good products, they do hot sauces, marinara, spaghetti  sauces, all kinds of cider, sodas you name it. Google them.

 I was on the North Shore of MA..going to school at Salem State and cooking/fry-man at HoJo's on Rt 95 in Rowley,MA. The menu called it a Hot Beef, but lots of the tourists heading North (we were on the Northbound side of I-95) called it a Manhattan. New Yorkers Maybe??? I have never heard that descriptor used anywhere else.

For some reason the term 'Manhattan" also seems vaguely familiar to me so I checked around, and apparently there's some evidence that it originated in or around Indiana (another take on it is here).  Makes me wonder if I've seen it on a menu somewhere during my trips to and from Ohio, or down through Illinois toward St. Louis.
 
My mother-in-law roasts a standing rib roast on Thanksgiving Eve and hot beef sandwiches made with the leftovers make a great Thanksgiving Day breakfast.

Beef (or pork or turkey) Manhattan was a weekly standby on the high school lunch menu in Columbus IN back in the 60s.Probably the most looked-forward to school lunch item in my town and I suspect in a lot of Southern IN.

All the diners offered Hot Turkey and Beef open face sandwiches. I used to offer a Carved Roast beef dinner and changed to the Hot beef sandwich, it sells real well......For $5 it should sell well..................

Been called Manhattans in Indiana for as long as I can remember. Also seem to recall some places in Washington (up around Bremerton) calling them that.

Thanks for the memory Jog !! Maybe I was crossing wires between generations??? I don't recall hearing the term MANHATTAN here in Southern Indiana...but maybe my hearing is muddled.  At least I got the label correct for the food item...just the Geography seem out of focus !

That is Mondays special here at our Square 40 Rest. Meat and three $5.99 includes 20 oz drink.
 
It is left overs from Sunday brunch. But on the next day even better.

A lot of restaurant owners, after they reach a certain comfort level, start to look outward.  Second location, franchising, etc.  Most of the times it's pipe dreams and this is usually about the time that they lose sight of what they are good at and their business starts to falter.  But you are keeping your focus inward and concentrating on putting out a large array of fabulous food, basically being the best at what you do.  Your attention to detail is what makes you stand out.
 
I can't wait to dine at Chubby's and give you the official review you deserve here on RF.  Or you can teach Greymo how to use a darn camera!
