We just got back from a trip from Louisiana to Colorado and had a great meal in Clayton, NM. The Rabbit Ear Cafe specializes on in Mexican food. They have awesome housemade salsa and especially good fajitas. There aren't a lot of restaurants on Route 87 but this turned out to be a great option.
