I'm not at home, but I seem to recall that Raichlen's BBQ USA gives a good explanation of barbecue styles and proper results. I think that StinkingChicken has the book, hopefully he can confirm.
p.s. I think I'll change my screen name to CarolinaBrad_Olson.
I think you mean "ScreamingMonkey, CrouchingTurtle" or something like that.
As for the name change, I fully support it along with your move to Arizona.
I appreciate your frustration with your friends' ignorance ("Generic BBQ Sauce"?!? I think I feel my chest tightening up...), but if you've tried to educate them and they refuse to be educated, maybe it's time to give up. Not on the education, but them as friends. I mean, really, you give 'em the information and they turn up their noses. Are they really worth your loyalty and devotion?
As for the boiling of ribs, I live by the old 'Que Credo; "The only time water should come in contact with ribs is if you're giving them a bath or making rib soup. Any other use of water on ribs leaves them, and the individual responsible for bringing them together, beyond redemption."
Just sayin' is all.
