Bacardi Rum Cakes

My wife just brought 2 back from her trip to the Atlantis, she was going to give them to her office workers. I tasted one, they stayed home, both of them. Incredibly good in the morning with my coffee. Anyone tried one, like, no like?

Chewy, Are you talking about the ones that are almost like a fruit cake? I know I tried a couple, not Bacardi though, and didn't care for them. I'll leave the cake, take the rum

joerogo Chewy, Are you talking about the ones that are almost like a fruit cake? I know I tried a couple, not Bacardi though, and didn't care for them. I'll leave the cake, take the rum It's a yellow sponge cake, bottom of it soaked in Rum, no fruit I don't believe.

Sounds like a Rum Baba also known as Baba Au Rhum. Was it spongelike and swimming in liquid?

Those cakes are terrific. Actuall, it is a yellow cake. I make them quite often and we guzzle them right down! Good rum is the key to a delicious rum cake.

I looked them up on line, not too expensive. $14.95 for a "large". Oops, that company is in the Bahamas, might be a hefty shipping fee. They look very easy to make though.

kishkaeater Sounds like a Rum Baba also known as Baba Au Rhum. Was it spongelike and swimming in liquid? Not swimming buy the bottom was definitely very moist, it came in a can probably 9 inch, with a Bacardi label on it!

Incredibly good in the morning with my coffee. Anyone tried one, like, no like? I make several of them every year around the Christmas holidays.. I give them as gifts to my friends and sold several of them to the Miata club bake sale. Believe it or not, they went for better than $50.00 each. Those of you who posted that it was a yellow cake, you are correct. The key is to make a drizzel of heavy rum with sugar and butter and punch holes in the cake and soak it with the rum, sugar and butter mixture and let it soak for a day or so. In addition I use pecan crumbles in the bottom of the bundt pan and it works out really good. Fairly easy to make but make sure you use a oil flour covering in the pan to allow easily exit from the pan. It keeps it pretty also. I sorta heavy up on the rum mixture that I pour over the cake and in the cake. Paul E. Smith Knoxville, TN

Mr Sundancer - I've made many of the Rum cakes you're describing and they always turn out great - everyone likes them. Another good one is an Amaretto Pound Cake - it's a heavyweight compared to the Rum cake - made from scratch with butter, eggs, sugar - almonds on the bottom of the pan and then drenched in the Amaretto, butter and sugar glaze. I sort of heavy up on the Amaretto too -
