I picked these up yesterday at the store. They were on sale. Any suggestions on cooking them? I also have some small portabellas on hand.

Last time I found the Maitakes and a bunch of fresh chantrelles I made a mushroom soup. Yummy!

I think you have to first shave the Pom Poms.

UPDATE! I sauted the three types of mushrooms (portabella, Maitake & Pom Pom) with garlic , shallots and a little white wine. I wanted to be able to really taste the mushrooms. The pom pom's were a little blah for me but the maitake were outstanding. Lot's of woodsy flavor. I actually bought more when I went shopping this weekend. This time I went to a local farm market and bought them "loose" along with some oyster mushrooms and more portabellas. Much more cost effective. They also had more I hadn't heard of before. Next payday I will return and get some I haven't tried before.

I have a friend in Indiana who harvests the Hen of the Woods every year. She separates it, dips in flower and eggs and maybe something else and just fries them. She's thought about sending me some, but it just won't work.
