Easter breakfast today was creamed eggs over biscuits, sausage and bacon.

It's such a simple recipe. It's something my husband grew up eating. All you do is make a simple white sauce with butter, flour & milk(add a little cream if you want to add extra richness). I peel the hard boiled eggs and put the yolks in a small dish. Mash them with a fork and add to the cream sauce. Then add the coarsly chopped whites. If you feel you need more eggs in it just peel a couple of more, chop and add. My husband loves this over toast but I love almost anything over a biscuit!

I've had something similar called egg gravy only it was made with scrambled eggs.
 
Nothing is bad with a good cream sauce!

I've never had creamed eggs for breakfast, but that looks delicious.  Creamed eggs on toast was my mom's go-to dish when we were sick growing up.

I have some packets of Pioneer Brand Sausage Gravy Mix. I'm gonna sub that for the White Sauce!

It's available at WalMart & Kroger in the packaged gravies section. Good stuff if you doctor it up a little bit.

Foodbme, That sounds delicious! I buy a sausage gravy mix, which I add sausage to and I love it. Adding the eggs would be a nice addition.

PNWCHEF, try this, instead of salt, add granulated chicken or beef, enhances the flavor a good bit!

Sometimes convenience wins! Less mess, less c leanup. Normally I agree with you but this stuff is pretty good for a mix.

The one I use is also very good. I think the brand is Southland. I also make it from scratch when time permits.
