Recipe wanted: Smoked fish dip or spread

In this part of Florida we have a rather famous local smoked fish place called Mrs. Peters. They along with many restaurants in the area sell a smoked fish spread as an appetizer. Seems like a pretty simple mix meant to be spread on crackers or if you're inclined veggies. Unfortunately my credit application was turned down at Mrs. Peters and our local big supermarket chain Publix no longer sells their variation of it. This might be similar to the smoked mullet spread sold on the gulf coast of Florida.
I'm looking for recipes that won't break the bank and are pretty simple prep.

    cooks.com has a good, easy smoked fish recipe I use. It says use smoked whitefish or salmon, but I use whatever smoked fish my local butcher has available.

    I have one at home that supposedly came from Brown's Restaurant in Cedar Key.  Whether it is authentic or not, don't know but it's really, really, good.  It calls for smoked mullet but I guess you could use whatever you want.  I'll post tomorrow.

    Saw this recipe today in the Aug issue of Louisiana Cookin' magazine and remembered your post.  It's for smoked trout but probably any smoked fish would work. 
     
    Smoked Trout Spread
     
    8 oz. cream cheese, room temperature
    1/2 cup chopped green onions
    3/4 cup sour cream plus additional, if needed
    1 TBS. chopped fresh dill
    1/2 tsp. Louisiana hot sauce, or to taste
    1/2 tsp. salt-free Creole seasoning, or to taste
    1 4oz. pkg smoked trout fillets
     
    In a bowl beat cream cheese using an electric mixer until smooth.  Beat in green onions, sour cream, dill, pepper sauce, and Creole seasoning.
    Add trout and beat on low speed until smooth, thinning with additional sour cream by tablespoons, if needed to achieve a smooth consistency.
    Season to taste with salt and pepper
    For garnish, chopped red onions, capers
     
    Spread mixture on serving plate or bowl.  For a garnish, top with chopped red onions and capers. 
    Serve chilled or at room temperature with crackers or baguette slices

    Captain Jim's Smoked Salmon Dip

    4 Oz fresh smoked wild caught         1/2 Tsp dill
    -sockeye salmon                              1/4 Tbl paprika
    4 Oz Philadelphia Cream Cheese        1/4 Tsp black pepper
    1 Tbl sour cream                              1/2 Tsp sea salt
    1/2 Tbl mayonaise                           1/2 Tsp Worcestershire sauce
    1/4 Cup finely chopped yellow onion     1 Tsp tabasco sauce
    1 finely chopped garlic clove         1 Tsp Real Lemon

    Mix together and let sit overnight in the frig.

    You can take that same smoked trout spread, fill wonton wrappers and deep fry them for a wonderful appetizer.
     
    Or mix it with mashed potatoes, fill wonton wrappers and pan fry (steam) them.  Good stuff!

    ann,    I think Davidd (my notes) had posted that recipe for you about 2 years ago.  ... anyway I had it in my file because I was going to try it with smoked mullet, but haven't gotn to yet.

    Mine is under recipes and cooking techniques, "smoked mullet(fish)dip.  Type in smoked mullet dip, I believe that's what I did!
