i just got to try bear bacon and man let me tell ya, thats some good stuff !
i have some moose bacon waiting in the wings for tomorrow :)
 
and have a friend hunting down pickled moose nose.......eehhh, we will see, i'll try anything on a plate once, lol....
 
whats some of your favorite "exotic" meats ??

I do love moose but I'm not too sure about that pickled nose thing.  I also like caribou and bear and elk.

Pickled moose nose is something I ate with a Cree guide years ago. I can think of a few things I prefer to moose nose.

I think mouse nose would be better. If you like blubber you'll love pickled moose nose.

I did try whale blubber (muktuk) once.  I could not swallow it.  Only thing I ever spit out in my life.  Nasty.  I'd rather eat mouse nose!

Tried alligator jerky a couple weeks ago.  Tasted like jerky with lots of spice.
 
I guess wild boar chops or bison burgers don't count as exotic.
 
I'll leave the moose nose for everyone else.

I'm a big fan of Bison and Elk.  Wild duck and goose when I can get it.  So much leaner and more flavor than the farm raised ones.

I like wild duck and goose but man what a pain to clean.  I spend hours with pliers picking out the remaining feathers and still never get them all.  So now it is strictly pre-dressed from the supermarket waterfowl for me.

I made a big pot of moose chili a couple years back, it was singly the best pot of chili I'd ever made. Other than that, I think the most exotic thing I've ever eaten was ostrich "Slim Jim" type snacks. Had quite a kick to it.

I was told I had bear once but suspect it was venison, regardless it was delicious. You don't find much exotic meat around here.
