I changed my mind. 

I'm having to drink a minimum 64 ounces of water a day for a test and I'm freezing.

So...

Kraft Macaroni and Cheese.

It feels so good when it's right out of the pot.  Warm going down.

Hi Mar, Last week when Hurricane Sandy was in full force I was texting one of my coworkers back and forth. We have many beautiful very large trees in Park Ridge so it was a little scary. We were both lucky not to lose power. Our texts:
Kristen: I'm so scared the wind is awful and things are flying around the backyard.
Me: Yes, I'm scared too. It makes me sad because the trees I love are now scaring me!
Kristen: I just made a box of Kraft Mac n Cheese for dinner to help calm my nerves!
Me: I'm having pastina cooked in broth.
Kristen: We're both so predictable!
There's nothing like much loved comfort food!

Dinner last night was Parmigiana di melanzane. I had mine with a side of linguine while lleechef had a salad with hers. I've eaten a lot of eggplant Parmigiana over the years, much of it in fine restraurants and the homes of extraordinary cooks. Still, I'd always considered mine the best I'd ever had. As much as I hate to admit it, lleechef's blew mine out of the water.

Tonight is the ultimate in simplicity....the weather today was unseasonably warm in St. Louis, in the 70's, so we are eating on the patio....we are starting up some logs in the firepit, roasting hot dogs over the fire with the kids, served along with sides of mac and cheese and baked beans.  Just like camping.  And for dessert...toasted marshmallows and Smores.  I might have a beer or two, also...    Might be among the last times to do this in shirtsleeves or a light jacket.
 
Tomorrow night, grilled trout from last months' trip to the Ozarks...with rice pilaf and a Greek salad...

Recently, Bob's kosher friend has been bringing us some awesome veal patties from a Kosher butcher in Milwaukee. Tender as all get out, and the breading has a hint of nutmeg.I just bake them( they would not be good with sauce and cheese) and we so enjoy them.

This is my first time to post, so let's see if I can get this right. I'm from Texas, transplanted to New Jersey (work in Philadelphia) to marry my Philly born and raised husband. We don't discuss football.
Coming from TX, I was very familiar with hurricanes and tornadoes. Sandy blew through my 5 acre farm here in south jersey without major damage, but we drove to Tuckerton to check on our boat at the marina, and it brought back memories of Katrina and Rita.
This is just to introduce myself. I love the Italian food here and I've adapted, but miss my TexMex, so I cook a lot of TX food.
Tonite is Tuscan Chicken breasts and eggplant rollitini. I will see if it's pic worthy in a few hours.

How do you make yours?
 
I do mine with a whole chicken.  Put cut lemons inside and garlic, rosemary and olive oil under the skin.
 
Thanks for the idea as I haven't made that in some time.

I use chicken breasts, pounded just slightly to even them out, and sauté with a sliced fennel bulb, fresh rosemary, garlic, chicken broth and parsley. It makes a great sauce too.

Last night I salted some chicken thighs and marinated them with some store-bought pesto.  Sometime this afternoon I'll put them on the grill over indirect heat and I believe Mrs. Chicken is planning to fire up the bread machine.

Nice lunch out of a small steak. My vegetarian partner went to our local farmer's market afterwards and bought a a small bunch of baby beets and plans on roasting them and the greens for dinner. I think I will have crackers.

That is VERY cool! I'm glad he not only ate, but apparently enjoyed it!
 
mar...I like it with tuna. I added some mushrooms, too. Today was a memorial tribute at one of the local theatres for a good friend who passed away in September. My state of ick is more emotional than anything else. It'll pass.

Today is back to my Texas roots - slow cooked pinto beans and sausage, and Mexican cornbread. The cornbread has a layer of cooked meat, cheese and onion - almost a meal itself. Also made a pumpkin-pecan pie. turned out great.

I made a pot of chili a couple weeks ago, and in order to not get too "chili'd out", I made some Kraft mac and cheese (with some added cheddar and sour cream) and put some of the hot chili on top of it. Really hit the spot.
 
Tonight I'm having pan roasted chicken breast (on sale for $1.69 a pound, so I'll be eating chicken all week) in salsa verde, with green beans and beets on the side.

ChefBuba - TOO FUNNY! I made King Ranch casserole, and these northerners thought I was some kind of genius. They didn't realize it's on every school cafeteria menu in TX. They also were dazzled by broccoli-cheese and rice casserole. You seem to know about my brand of cooking - I brought Frito pie and Frito/Ranch Style Bean salad past the Mason/Dixon Line too.

I cooked for real! It was something of a challenge, and took about 87 years, but other than not being able to take anything out of the oven that requires two hands, I think I've figured it out. Crab-stuffed chicken breasts, broccoli in garlic cream sauce, and butter beans. Don't know what my obsession is with butter beans lately, but I've been wanting them almost daily.

Dinner for me tonight was tri-tip and smashed sweet potatoes.  I had dinner at Woodranch.  It's a chain but I love their food.
 
Felix, do those beans come out of a can?  Frozen?  Made from scratch?  I need a new carb in my life.

They're canned. I buy the Meijer brand because they're cheap (regional store), but there's a better brand with bacon pieces in it. Reber? Something like that. I buy those when they're on sale.

When I was a kid my mother made some sort of barbecued limas with a tomato sauce and onions.  They were wonderful but no one has the recipe.

Bulgoki (Korean beef) and steamed rice tonite!  I get the marinated meat at Trader Joes, and slice it thin.  Stir fry with julienned carrots and thinly sliced cabbage, and dinner in 20 minutes!

I have my real cast! It's amazing how much easier it is to function now! I made pot roast, complete with onions, potatoes and carrots. I'm already looking forward to a cold roast beef sandwich with chili sauce at midnight even though we got done eating maybe ten minutes ago.

Felix - I've noticed your writings about the cast and pain....I'm sorry for you.  One year ago Saturday, I broke my ankle in SO many places - they couldn't do surgery to install the titanium and set the bones for a week due to swelling.  I was so depressed, totally incapacitated for 8 weeks, non-weight bearing.  I hope yours insn't that bad, but my point was, I'm back to running with my Nigerian Dwarf Goat kids, and back to normal activity.

I do!  They are Nigerian Dwarfs, two kids.  They will only get to be 18" tall.  Our little girl, MIST, and our boy, MOE.  Also have 5 chickens, each laying one egg per day.

Felix - I've noticed your writings about the cast and pain....I'm sorry for you.  One year ago Saturday, I broke my ankle in SO many places - they couldn't do surgery to install the titanium and set the bones for a week due to swelling.  I was so depressed, totally incapacitated for 8 weeks, non-weight bearing.  I hope yours insn't that bad, but my point was, I'm back to running with my Nigerian Dwarf Goat kids, and back to normal activity.

Thank you! I did it on purpose, though...there was so much arthritis and so many bone spurs in the main joint of my big toe we had to fuse the bones together. I'll be non-weight bearing until at least around mid-February. But now I wanna run around with goats! My sister used to have some, they were way too cool!
 
Dinner tonight is leftover pot roast. I made enough for at least eight people, and there are only two of us.
 
Edit:
And again, I'm a liar! Totally forgot the microwave died the other day, and I refuse to fire up the oven for leftovers. So...tomato soup and tuna salad sandwiches. My sister is coming over tonight, hopefully I can enlist her to carry the microwave we inherited from my grandma upstairs.

The same as what? Tofu?..... Someones got you drinking the kool aid!

 
Remember this is my 35 year partner, I have to be supportive and positive but seriously, with the spices and kraut, the taste is fine. We also use tofu crumble "meat" to make stuffed peppers and again, you would not know it is not ground beef but the spices and seasoning makes the difference. This is a health mandate not an ethical one.
