Looks good, Jennifer! Oscar Meyer bacon was on sale this week( 2.49 per package), so BLT's are on the menu! Your ham dinner ( love acorn squash) looked fantastic, as well.

Great pictures!

I tried making acorn squash once.  I sliced it in rings and baked it.  And baked it and baked it and baked it.

It never got soft so that was the one and only time I ever tried.

So how long did yours take?

Thanks mar!  I have read that it can be done in a microwave in 10 mins, possibly a bit longer.  I preferred roasting it in a pan in my roaster.  I started checking after 20 mins and I do poke because I haven't completely figured the timing out and each squash is different as far as size and shape.  I just kept the largest half for myself and poked it maybe twice to feel that it had reached the desired consistency, so everything still looked good for everyone else.  You can feel when it's right if you poke it and I think it's better to cook it longer rather than not enough.  That was my 2nd time making it.  It was yummy!

I also posted pics of pan fried tilapia with creamy dill sauce and fried pork chops.  I finally got permission.  I feel like I've been a good kiddo and have just gained new priviliges!  :p

I always do acorn squash sliced in half, then cut-side down in a pan of water. 350F for something like an hour, or until it's tender. Or, fill it with sausage and do it cut-side up, loosely covered with foil. Same temperature, same time.

Tonight apparently we aren't having dinner. It's been awfully special at my house today with attitude.

Thanks, girls!  I'll have to try it again.

Attitude for dinner, huh?  Yikes!

We received a distressed call mid day from our friend, Steven.  His computer was working.  Sharon is the computer pro so we went over there, then to dinner at Dinah's and back to Steven's because it wasn't like he wanted.

I had fried chicken, yellow rice ruined with flecks of red pepper and green onions and creamed spinach.

Last night was Ina Garten's Perfect Roast Chicen (roasted with sliced fennel, onions, carrots and thyme), mashed potatoes and gravy. Tonight is chicken fried steak with cream gravy, baked macaroni and cheese, and fresh green beans cooked with bacon and onions. I'm going to SAMs Club today for the national "Taste the Holidays" freebies. I don't know why I look forward to this event so much!

Mar,
I'm making acorn squash for dinner tonight.  Cut in half, scoop out the seeds, salt and pepper and put in a Pyrex baking dish, cut side down, add some chicken stock, a little butter, foil on top and bake until tender.  Then I take the foil off, turn it over and add butter and brown sugar into the cavaties and bake on high heat for about another 20 mins.  With this we will have roast pork tenderloin and Brussels sprouts.

I like to cook acorn squash on the grill.  Cut side down over the coals until it caramelizes and then cavity up over indirect heat with a big ol' chunk of salted butter thrown in.  No need to add sugar!

Lisa, thanks for the tips.  I'm going to try it again.

I think pork loin is a perfect match.

Brad, did you score the interior of the squash or are those grill marks?

Much the same but we like butter and cinnamon and the cut side up. No foil.

Tonight I did some Asian-marinated roast boneless pork loin chops, with baby carrots in a butter-sugar-lemon juice glaze on the side. The goal is to clean out the refrigerator so I have room for Thanksgiving dinner in there.

After three days of not being synchronized on our meals due to deer hunting, shopping and getting ready for Thanksgiving and the big decorating throwdown the three days after Thanksgiving:

Got a nice fire in the fireplace .....

There's a really nice thick T Bone on the grill right now - potatoes in the oven - oysters on ice - and a small salad waiting.  And a bottle of Cabernet.

Mar, I scored the inside of the squash.  I don't think it made much of a difference, especially since the flesh gets scooped out and mashed together.

Tonight I chopped up the vegetables and meat from the pot roast, threw it all in a pan to simmer with the gravy, and called it beef stew. Three more containers OUT of my refrigerator!

The other half is gone deer hunting, so it's dinner for one the next few nights. I'm making a pot of split pea soup with a ham hock. He's not a fan, but I like it!

Not so into the pickled herring, but I would love some lox and smoked whitefish!

Tonight I reheated Thanksgiving leftovers again, before getting what's left packaged into the freezer for later. I'd forgotten how very much meat is on a 7 pound leg of lamb.

Last night we had ham sandwiches on white bread.  One with mayonnaise and one with Miracle Whip.  I had the mayonnaise.

For Thanksgiving my brother bought a spiral cut ham from Costco.

It was the best ham I've EVER had.  It wasn't salty at all and it had a sweet taste to it.  I took home the ham bone with enough meat still on it to make a few sandwiches.

The bone will be frozen for a bean soup to be made at a later date.

I don't believe in weird combinations says the person who had tacos and latkes last week.

Wish I could still eat chorizo.  It tries to kill me when I'm sleeping.

Yummm... macaroni and cheese.

Have to go check the kitchen to see what we'll be having.  Maybe eggs!
........

Just finished.  We had cheese omelets.  I ate mine with Tropical Chili Sauce.

Tropical is the brand.  It comes in a catsup sort of bottle and has the same consistency of catsup.

Spicy and sweet, both.

If you have a Ranch 99 store near you it's available there.

We were all lazy and the kids were actually somewhat behaving (I'm at my niece's house for a few days) so we got their all-time favourite...$5 hot and ready pepperoni pizzas from Little Caesar's. With ranch.

A pot of Turkey Lentil Soup is simmering on the stove which is for my mother.

Think I'll have Turkey Noodle Soup for dinner.

Soaking a bag of beans and the ham bone is in my future.

Sorry you're sick.  You need what I had...

Mediocre Matzo Ball Soup purchased at Jerry's Deli.

It's not really good, it's just extremely convenient being across the street from where I live.

I was lucky.  This is the first time ever that the knaidel (Matzo Ball) was firm and not just mushy fluff. I like sinkers.

I ended my take home dinner with some marbled halvah.

That sounds perfect, mar! We have nothing like a good deli here. If all you want is a sandwich, then there are a couple, but no one does good soup, it's all pre-packaged stuff from Gordon Foods or Sysco. And although we have quite a sizable Jewish population, we have no Jewish delis whatsoever.

Tonight for dinner I'm have soft-boiled eggs, English muffins, and bacon. I hate to waste bacon when I can't breathe or taste, but I'm fairly certain it's a cardinal sin to throw bacon away.

Well I went lazy.  I needed to use up some of those tri-colored mini potatoes.

I boiled them and then tossed them in olive oil and Italian Herbs and salt.

Very filling but totally missing protein.

Mesquite grilled bone in extremely large chicken breasts - dirty rice and a salad.  The rice had too much cayenne pepper but the chicken was fantastic - I deboned it and tomorrow for lunch I'm having a salad with half of what was leftover.

In addition to what you see here the breakfast came also with 2 nice big pancakes!

There was a fabulous confluence of happenings today! I'm finally feeling better, I didn't have time to pack dinner before I went to the arena to work, and one of my co-workers came in early. Which means I got to have pizza from Georgio's around the corner, because he went for me! Two slices of nirvana...one Hawaiian, and one bacon cheeseburger.

My ham bone and bean soup wasn't near ready at dinner time.  The beans were still hard after simmering for two hours.

So....  I mixed up half a can of Devonshire Pudding and half a container of Voskos Plain Greek Yogurt and it was quite satisfying.
