Scottish roast chicken with oatmeal stuffing, Brussels sprouts with Canadian bacon, baked sweet potatoes, Grands honey butter biscuits, cranberry sauce (from the can...I'm a big fan of the pretty ridges too ), and lemon meringue pie.

I had a sesame seed bagel, toasted.
 
On one half I had spinach dip purchased from Costco and on the other side I spread Ski Queen Gjetost Cheese AKA Norwegian Goat Cheese.
 
I think the cheese was on the top half.

Christmas is my favorite meal of the year. Family friends and great food. Turkey, ham, chicken and cornbread dressing, oyster dressing, dirty rice, mashed potatoes, giblet gravy, roux peas, mac and cheese, green beans with new potatoes and ham, cranberry sauce (canned also), sourdough rolls, chocolate mousse cake, coconut cake and more homemade candies and cookies than I can list. Now I need a nap and a diet.

Christmas Eve was traditional tamales, chili, and shrimp fajitas.

Christmas Day - crab stuffed mushrooms, grilled filet mignon with rosemary garlic skewered shrimp, wild mushroom orzo, sauté asparagus, and strawberry spinach salad with balsamic vinaigrette. Had to go back to work to get a break from cooking!

Tonight it's SOS...
 
While some make SOS with chipped beef (Army style) which I've enjoyed...
 
I make mine with ground beef (Marine style), gravy, slothered on multigrain bread...
 
I did some a couple of nights ago after not fixing this for many years, and I'm ready for more (I have 3 lbs of ground beef precooked from a few nights ago)...

I didn't know they used ground beef in the Marine Corps. That's what they used when I was in the Air Force. Still, I make mine with chipped beef.
 
By the way, it's been a while since I last saw a post from you. Good to see you again.

Last night - Christmas night - we had all of our relatives and cooking and gift giving thing done and out of the way.  Due to all of the stress getting that taken care of - we were ready to put the prime rib on the grill - watch the deer in the backyard - and have a nice relaxing night.
 
It was raining and very windy and some light snow was on the way.  Just before went to start the grill - Power Outage.  It never fails - I can count on Entergy to fail every time the wind blows a little harder then usual or there's a threat of a thunderstorm or heaven help us - any snow in the forecast.  It went out at 6:20 and finally came back on at midnight. 
 
Anyway - we spent today putting up the Christmas stuff and the Prime Rib is on the grill and potatoes are in the oven. Better late than never.

I never have. In fact, more than once if I've mentioned I'll be taking pictures, they make sure the kitchen knows so my plate looks especially nice.
 
Dinner tonight was leftover Scottish roast chicken, oatmeal stuffing, cranberry sauce, and biscuits. Followed by some cookies.

I haven't cooked since Christmas...I saw no reason to when the fridge was so full of leftovers I could barely get the door shut.

We got really tired of leftovers, so it was Carabba's last night. Back to reality today - we're expecting snow, so I'm in the mood to stay in and cook something wonderful. Now I just have to figure out what it will be.

Since I have officially graduated to crutches, I was able to go to the pizza by the slice place around the corner from our arena on my way in to work tonight. One slice BBQ bacon chicken, and one slice loaded baked potato (potato slices with bacon, green onion, cheese, and white sauce). It was heavenly.

A grilled 2" NY strip that we shared (and still had half of it left over) - sauteed mushrooms - grilled chile lime shrimp and twice baked potatoes.

Today was Christmas at my Dad's house. BBQ meatballs, baked beans, seven layer salad, pasta salad with ham, relish tray (sweet and dill pickles, black and green olives, regular beef and spicy beef sticks), hard cheese and crackers, whitefish pate and crackers, olive tapenade and crackers, chips and dip, pinwheels (garlic-herb cream cheese spread on tortillas then scattered with dried cranberries, feta, green onion and pecans, rolled and sliced), another candy tray identical to the one from my house, apple pie (Mrs. Smith's frozen), two flavours of Pepperidge Farm frozen cakes, and a variety of cookies. Plus various and sundry varieties of M&Ms, mixed nuts, and pretty much every flavour of soda Faygo makes.

A Boston Butt's been on the grill since 10am - made some BBQ Beans and cole slaw - I usually like to make my own slaw dressing but I found one yesterday that looks great - Naturally Fresh is the brand and if it tastes as good as it looks......

I made a lasagna yesterday, homemade sauce, and put some chopped fresh baby spinach in the ricotta layer. Served it with fresh steamed broccoli. It was killer on a cold windy day.

At lunch I went to the store and bought 3-1/2 pounds of raw 26-30 shrimp and 3 limes.  Now I just need to come up with some ideas, but I have plenty of garlic and a bottle of roasted sesame oil at home.  Could be that a quick Asian-y marinade is in the works.
 
Or I'll cook the chuck roast tonight and the shrimp tomorrow.  Dang...I forgot to buy buns/rolls for the beef sandwiches.

Flemmings...........Yummmmmmmmmmm   Absolute best and most tender steak I have eaten!  Their specialty mashed potatoes are awesome!  
We dont often eat there as La Jolla is the closest and that's a bit of a way to go for us now.  Pricey but worth every cent!

Costco sells discount gift cards for FLemmings. 
 
After I had made the reservations at The Daily Grill my brother let me know that I could buy $100 worth of The Daily Grill gift cards for $80 at Costco... so I did.
 
Cost me $365 to exit Costco.
 
I forgot...  it's the inclusion of sushi (even though it's seafood) and miso soup on the menu.  Just seemed out of place to me.

Just the two of us tonight so we are having crispy roasted potatoes, creamed herring, assorted cheeses, crackers and hummus.  Our New Years will be hours before midnight. Like my partner says, it's midnight somewhere. She'll go to bed before 9 and I will stay up later. Most of our friends are equally boring but we used to party hearty 20+ years ago!

I think, at least here in the south - you have the blackeyed peas and some kind of greens on New Year's Day for good luck in that year - at least that's what we've always done.  We've got a ham bone from a spiral sliced ham from Christmas that I took from the freezer yesterday that will cook with the peas, slow fried potatoes with onions, turnip and mustard greens with diced turnips and jalapeno cheese cornbread.

I found this recipe for Tito's Tacos... Burritos...and I think I will try it.. I have little to lose since the taco supplies here are less than wonderful.

The thought of cloves makes me <<<shudder>>> so it will have to be ground anise as a replacement.

I will need to find some shells or chips in the neighborhood... that are not an absolute nightmare.

Thanks, Baileys!  Sounds delicious.  I've always had them on New Year's Day, too, but they haven't been lucky yet.  I'm trying a new version this year that is supposed to be luckier (someone said using broth is a problem--who knew?).  Time will tell...  Happy New Year!
