I always prefer Frozen food because frozen food is easy to keep and easy to use, so tonight I'm having fish sticks.

I also had breakfast for dinner but it was not pretty.
 
Oatmeal with butter, brown sugar and milk.

It's going downhill with every post...I also had breakfast, but mine was a bowl of Fiber One caramel clusters cereal with vanilla almond milk.

I love breakfast for dinner-cereal is good, as are eggs, etc. When my Dad was getting his Doctorate, and money was tight in the summer( he didn't get paid then) Mom made waffles, bacon and eggs on occasion, for dinner; we, as kids, thought it was fun-I still do

Ann, I always thought breakfast for dinner as a kid was something special and my kids have always felt the same way! I guess it isn't until we become adults we realize, oh yeah, easy and cheap!! I still love it!

It is completely coincidental that I made this on Cinco de Mayo...my Mexican friends and relatives are horrified that I make it at all, since it's got absolutely nothing to do with Mexican cuisine. Layered Tortilla Casserole, with cheater guacamole (1 avocado, 1 tablespoon lime juice, 1 tablespoon salsa, dash of salt and pepper).
 
 
 
There are no plated pictures...it looks like hell on a plate. But it's really tasty!

I circled Tito's parking lot 3 times which was a feat in itself.  Then I gave up.  That took at least twenty minutes.  Swearing was involved.
 
I had the chicken dinner from Versailles.  Half a chicken, white rice and black beans with onions and plantains in a wonderful garlic lemon mojo sauce.
 
Two chicken dinners fed four.

I made Ree Drummond's recipe for spicy garlic shrimp and tossed it with fettuccine. Delicious and easy! Served it with warm semolina bread.

The only changes to her recipe is to use cleaned and deshelled, tail on shrimp and I use 1 1/2 sticks of butter as opposed to 2 sticks.

I leave the tail on and usually buy peeled and deveined frozen shrimp to use. It is so easy to make and a crowd pleaser too. The shrimp don't even have to be fully defrosted.

Ann, The frozen ones I buy are uncooked. It would be rare for me to buy precooked too.
