Hmmm, that's not a bad idea. You could make a meringue out of it. Same ingredients... just more egg and add sugar. Think about it... a pisco sour is already a half-assed meringue. 
Maybe a pisco meringue pie!
Or, pisco meringue on top of ice cream!

Yep. A meringue base maybe with a hint of lime.. PIsco- infused golden raisins or PIsco jelly. A perfect after-party! Good contrast in texture.

A PIsco meringue pie could win a blue ribbon!

i like your fryer set up. is there a model number any where on that unit.
magic cater just came out with a transport fryer the components of the top of your fryer are almost idenical to yours.
your has a lid right. a close up of the fry would be cool.
i sell resturant equipment for a living since i started doing my own build.
i realized that most of the equipment co. i deal with do not cater to the food truck industry.
maye i am on to somthing. any thoughts.

No, there's no model number on it. It's custom made. If you look under AA cater truck's catalog, look at "the old fryer"... that's what I have, but with a different lid setup.

That is what I was talking about. Note the lip around the top. It sits inside the fryer well and slightly covers the top edge of the top of the fryer. It does not need to be hinged to the fryer if it's heavy enough or put a tinfoil wrapped brick on it. Show that to any fabricator and give him 24 hours and boom you have your lid for much less (about 10%) of the cost of that portable fryer.

I had a chance to take some pictures of my service side. I never really got a chance before because it's always been parked against a wall on my RV pad.
 






 
I welded in my mounts for my new propane tank. The whole reason my truck is in my backyard. (my welder's power cord is too short)

Can you believe this is half full?!?!?!? Whoever the previous owner had filling this should be arrested.

I would ditch the pvc valve you have, and get an rv type valve.
I have several of those 3" and a few other sizes for my irrigation, they are hard to operate and will be even worse once you start getting food and grease in the ball valve.

Why is that? All you need to do is take it off, find a good propane dealer, and they will take the gas out give you credit and sandblast your tank.They will paint it, check the valves and fittings and all that is much less expensive than a new one. Almost any home tank is refurbished 4 or 5 times before they are junked. In fact I have never seen an under truck or home tank in our local scrap yards. We have a company that builds tanks that is about an hour away, but two local companies refurbish them here in town all the time. And of course they pressure check and re-certify them as well.

  That's the thing. I was looking at RV valves at first but it seems it would be difficult to adapt them to the size of hole that I have. It's got an odd opening diameter in it. Something like 2 5/32" OD or something weird like that. It would be sticking way out there by the time it got to a 2 1/2 or 3" I'll try and fix it though. I don't like the idea of a ball valve either.

I'm not sure that it could be refurbished. It has large chunks that rusted out and layers of it peeled off. I read that there is definitely a point where you can not refurbish. And I suspect this tank is well past that point. I'll check it out at a later date and if I can refurbish it, I may just mount that too and have a second tank... or sell it. AA wanted $800 for a tank that size.

100 lbs of LP is about 23.5 gallons depending on the temperature. Subtract 80% off that (as much as you can safely fill it) and it's about 18.8 gallons. Where as mine is 11.2 rated at 80% actual capacity. (so it actually could hold more than 11.2) I think that's how the standards are...weird. So a 100 lb tank is actually an 80 lb tank and safely holds 18.8 gallons. My 11.2 gallons would be about 47 lbs but to assume it's like a 50 lb tank would be wrong. Somebody correct me if my calculations or my impressions of standards are incorrect.

How often are you filling your (2?) 100 lb'rs and what type of equipment do you run off them? Do you think my 11.2 gal will be good for running a flat top and steam table all day?

Just my thoughts on Propane dealers and tank equipment in general "They (dealers) will rip you off in a heartbeat.
So be careful and do your own research." They always talk about the conversion to the new valves and you can do
that yourself. Here is a good example of what the OPD VALVE 30LB can sell for. But that said they average $15.00  to $30.00. And that is a lot cheaper than buying a new tank. Almost all the new tank parts are on line. And there are some very good threads here on RF on propane tanks, new and old.

Right now I'm running off a 50gal tank on the ground next to the trailer.
Gets filled every Wednesday, I average 25-30 gal running broiler, flat top & fryer for about 35 hrs.

I ended up buying two fan blades and motors from catering truck parts:

I am going to have a local fabricator build a hood around these fan installs. So far that is the plan. Meeting with him this coming week to see about laying out a plan. I feel like it will be less costly than installing a purchased premade hood. We'll see.

Thanks, Jack! That blue thing is a plastic menu/logo board backer. I'll be putting a logo on that and above that is the menu chalkboard, which also had some of that blue plastic, but I took that off and used chalkboard paint. Stay tuned... I'll be getting the paint and the logos done in the next few days (but it's snowing right now so nothing today).

I was thinking about the chalk board thing and I think that is an awesome idea. It would be great for promotions, daily specials, and announcing when and at what events your going to do. Goood Idea.

Not much to update. I finished the paint (but I haven't taken too many pictures yet). I've been trying to install the graphics but it's been ****ty weather. I still have the giant guinea pig and the giant logo to do. I did finally get the new LP tank mounted properly. I can't weld too good (at least for a critical propane tank mount) so I hired someone. Glad to have that done! The cold plate fridge seems to work well enough on cold days. Still not sure about the hot ones. Here's a teaser pic of the finished paint and graphics on one side....

Yeah, neither have I. I think it's all custom because it's all made out of fiberglass on the fenders. I think maybe it was in a front-end. But if so, I don't care because the frame is straight, the alignment is good. Or it could've been customized by whoever did the bodies for AA cater truck back in the day. I've never seen another AA or HIVCO body, or even any other P30 look like this one.

Update: I got my health inspection today!!! I've been dealing with the HD for quite some time because all the commissaries here are full. I went in there just asking about "the list" which is the issue I've had for about a month now. I turned in my permit application and they said "Can you bring your truck down here in the next few hours? We can do your inspection." I hauled ass back and got my Permit!!!

Thanks guys! I just got one of my business licenses today. I still need one more for salt lake city. And they're all crazy and don't really know what I need. They said I'd have to have my insurance a certain way but they're not sure what type of coverages yet. :-/ They'll let me know.
 
jupemars: My truck was build by AA cater truck in So. Cal. It's all custom made by the company. All So. Californian truck Mfg. seem to have a similar design.

Girlfriend and I hit the grand opening at the beautiful foothills of SLC yesterday. Simple menu, good price points, visually appealing cuisine, and most importantly well balanced, yummy flavors! Sure to be a success
