Interesting profile by Scott Simon of Gates BBQ on Weekend Edition Saturday.

At Gates Bar-B-Q, The Ultimate Flavor Lies in Burnt Ends

In Kansas City, burnt ends make the barbecue. Ollie Gates helped transform the food
from disreputable wrong-side-of-the-tracks fare to destination food served in a
 respectable restaurant.

Ollie's fibbing just a bit here. Gate's didn't used to serve burnt ends. Burnt ends used to be what you picked up for free off the slicer at AB's. But now, through the miracle of mass media, KC has become know as the home of burnt ends. So Ollie, ever the astute businessman, added them to his menu.

Wasn't Ollie the one who used to say "we don't burn our brisket."
