We have it a few times a year, usually the same way. Sometimes I'll throw it in the crock pot if I'm busy, but usually it just simmers away on the back burner of the stove for most of a day. I do tend to buy at least one every week this time of year to put in the freezer, though...can't really beat $2.19/lb.

Only difference is if I'm using the crock pot I cut it down to about a cup of water, since it makes a LOT of liquid as it cooks. I also just throw everything in at the beginning and let it go rather than doing the steps. Takes about 11 hours on low to be perfect.
