I have not seen this anywhere else, a wake up in the middle of the night, trying to get back to sleep idea! Smoke a pork butt, let it cool in a pan with sides, covered, overnight, Take the entire butt, pull the bone, chop it up in a processor, to a fine grind, adding some rendered fat from the overnight rest. Add additional rub to taste, add a bunch of East Carolina pepper vinegar sauce, let it marinate after mixing it in, say an hr., make a patty say 6-8 oz, fry till crisp on both sides, doesn't take long, mind you the pork is already smoked. Bun or straight up, Might want to add additional vinegar sauce or tomato based, but I ate it plain on a roll, Delicious! Sound Good?

Sounds like a hell of a good idea to me! I might have added some onion or garlic to the meat or maybe top the patty with it.but still sounds heavenly

I don't think I'd add any extra sauce but it sounds pretty good to me! A little more garlic for me probably!

Good idea...I deep fat fried one yesterday so it had about 1/16th-1/8in. pork crunch around it, middle hot and moist, MMMMMMMMMMMMMM!

That sounds wonderful -- especially with the Eastern Carolina sauce.

I think it sounds fabulous!I am not a huge fan of eastern Q, ( horrors-Bob's whole family is from there) but with all you have described, I would definately order it.

I saw one similar on one of the cooking shows. It was a small BBQ joint but I can't remember for sure where it was.... somewhere in the south like maybe Memphis or Athens Georgia. I just can't remember for sure.
