Hello everyone,

I'm working on getting my first business running. I have a parking lot which belongs to my dad. Is an automobile shop with a big open lot. I'm planning on setting up on the corner of the lot. there are ther shops around and also a police precinct. I believe with the right food and marketing I'll do ok.

I will be selling breakfast (Bacon,egg,cheese sandwich, pancake, maybe waffle coffee ect.) for lunch, Spanish food (rice,beans,stew goat,steak,broil chicken.ect.
Then in the future I will like to pay someone to operate a night shift.

Sounds like an ambitious menu. I have a trailer that is 4 ft smaller and refrigeration is usually pretty tight. I also use a licensed shed near the cart for extra food storage. You may need to consider that to accomplish the variety you are thinking about.
Think about the space you will need to prepare the foods prior to cooking, then cook them, then hot hold them, then rapidly cool leftovers and store them if they are to be reused the following day.

you're right. i have to set up a schedule and think about all the coordination needed to be done. its not gonna be easy the first few weeks. thanks for the advise.

Based on the factor of the parking lot ...if you had to make a decision on what to serve first...Breakfast Breakfast Breakfast. Do that well (and make sure you serve some pork roll) and you can really tear it up...in a good way.

The old-school trucks in Jersey City located near parking lots have always lived on Breakfast business making sure they have excellent bagels and hard rolls for sandwiches.. to start. Great strong coffee at a good price as well.

You have to learn how to be fast...really fast. You'll have to learn to crack two eggs at the same time in one hand...without breaking a yolk.
