I worked my brother's Memorial  Day sale today and we cooked on a Traeger.  It's a set it and forget it way of cooking.
 
I took pictures during the day so you could see the progression of the cook.
 
The Traeger has 3 settings...  smoke, medium and high.  This was set on smoke and let there for the day, not touching the brisket.
 
Raw meat set on the Traeger grill.  It was rubbed with a spice mix.
 

 
At 2 hours:

I asked my brother what he thought of the Traeger now that it's made in China.  His answer is that he can't see any difference.
 
I went home after 8 hours.  I suspect my brother had a good dinner.

So, the important thing is, ---Did you sell anything???
That's a nice looking piece of meat! What flavor of pellets did you use?

We sold about twenty Weber gas grills and a few of the high end grills.  No smokers of any sort.
 
The store is on a corner and we had stations up both streets.
 

 

 

 
The manufacturer's reps were there touting their own products while cooking on them.  They were handing out nice samples.
The word got out and all the homeless from all around were in line with those that come for the sale.  They ate well.
 
The Lynx rep had the best deal going with the food his was cooking.  He was cooking salmon, flank steak, peppers and corn on the cob.  Then he cut every thing up and it was do it yourself tacos.  The pictures of his booth didn't come out.
 
The Twin Eagles rep cook brats in beer, a chicken and terrific bacon wrapped jalapenos.
 

 

 

 
The filling for the jalapenos was refried beans mixed with picante sauce.  Everything was in a ziplock for easy filling.
 
The Alfresco rep had the longest line.  He was handing out full size Polish sausage with chili, Italian sausage with grilled onions and peppers or foot long Dodger Dogs with raw onions, mustard and *gasp* catsup.

 
I loved how they all multi-tasked on the grills.
 
FireMagic was also represented and they were grilling chicken breasts and sausages. 
 
Both actual owners of the FireMagic and Alfresco companies showed up for the sale. 
 
It was a fun day and I didn't remember my sunscreen.

Looks like a terrific outing!
Would love to have that Refried Bean Jalapeno recipe!

The recipe for the peppers is simple:
 
Halve, seed and devein jalapenos cutting off top.
 
Put a thin slice of chedder in each.
 
Mix a can of refried beans with a jar of Pace Picante Sauce.
 
Pipe into each jalapeno on top of the cheese.
 
Wrap each with a half piece of thick bacon, secured with a toothpick.
 
Grill on top of a piece of aluminum foil as seen in the picture.
 
They were delicious.

Do you pre-cook the bacon a little bit to eliminate some of the flare ups? I know it's on foil but does it drip down into the grill?
Do you drain the Picante Sauce at all?

He did not pre-cook the bacon.  They stuck a bit to the foil, but he managed to removed them without much effort.
 
One to one with no draining of the Picante Sauce.
 
I think this recipe is very forgiving.  You could probably use cream cheese instead of the beans for a different outcome.
