Seems like I'm hearing more & more about Speciality Sausage Restaurants opening up with non-traditional sausages on the menus like Wild Boar, Rabbit, Rattlesnake, Salmon, Vegan, Organic etc, etc. in addition to the standards like Brats & Italian, Polish etc. they're generally including Craft Beers in with them.
