Without even looking -  Texas:  BBQ brisket w/ pickle & onion.
 
After looking; I was right about Texas, but they have the wrong kind of ham for the Virginia Ham Biscuit.  Properly, it should be salt-cured "country ham", not the "Virginia Baked Ham" illustrated. 
 
And the Carolina sandwich is also wrong; it isn't made from pulled pork shoulder; properly, it should be minced whole hog 'cue.  At least they got the sauce right. 

I figured PA would be the Philly cheesesteak but I would prefer any sandwich from Primanti's. 

Texas: Chopped (BBQ) beef sandwich. Add-ons (sauce, onion, relish, pickle hot sauce, etc, etc, etc.) are up to the eater and what's available where your eating it.

I would also prefer Primanti's over a cheesesteak but would take a Roast Pork Italian w/ broccoli rabe from Tony Luke's over either one.

I have my doubts about the Italian Beef for Illinois. It's more of a Chicago area thing and I don't think you see it much when you get 100 miles away. Also in the area I live in the add on are gardinera or sport peppers, not green pepper.

I hope eggs don't stop NJ from being represented properly...with Pork Roll.

And it would be nice to see the other 37 states, but i guess it's a work in progress.

+1, though pit beef may be a bit more centralized to the greater Baltimore area.  I'm going to guess the crab cake will be the state sandwich of Maryland.

Where did they find that roll on CT photo?   Without a doubt, CT has the best hot-oven grinders anywhere - primarily due to their grinder rolls.  That pictured roll looks like something from subway.
 
 
That ham on the VA photo also seems way out of line.   It needs to be country ham, as someone else has mentioned.

Fully agree - steak sandwich on a hard roll, hot (or cold) lobster roll or a hot dog from numerous roadside stands is much more a draw for me than a chicken parm.

They could have easily included Washington DC's sandwich since it's mostly baloney.
 
 

 
i would say in NY, it would be Italian sausage with peppers and onions. At least at the NY State Fair, that's what the politicians get photographed eating

Had some pork roll on the Mohigan Sun buffet last week.   A real treat.   Wasn't sure that it was legally allowed to be served outside of NJ.   

Outisde of New Jersey? Sure. I used to get it at the 44 Diner off I-80 in Pennsylvania. They called it Taylor Ham on the menu. Heck I used to buy it at the Kroger supermarket near me here in Ohio.

My vote for AZ is the Sonoran Dog. While the folklore of Sonoran Dogs remains fuzzy, this much is known. American Hot Dogs migrated to Mexico in the 1940's. At some point, either in Mexico City or Hermosillo, Sonora, someone wrapped it in Bacon, grilled it, put it in a Bolillo Roll and dressed it with tomatoes, pico or salsa, beans, onions, guacamole, mayo or creama. 
In Tucson alone, more than a 100 vendors known as hotdogueros peddle Sonoran-style hot dogs. While unique to AZ, Sonoran Dogs are starting to migrate to other areas after visitors, (Like Buffetbuster & Wandering Jew) discover them.

It's over 840 miles by road from Key West to Pensacola, so I don't think there is any one sandwich that represents that whole route, but I'd vote for the Cuban (mixto) sandwich down here in SoFla.

Hmmm I would suspect WI would be either a brat in a rye bun with kraut and mustard, or a grilled cheese sandwich made with cheddar cheese.

A rye bun?  As good as that sounds I think a Sheboygan hard roll would probably be the more likely choice.

I think it would be difficult if not impossible to find ONE sandwich that could represent an entire state.  This strikes me more as the artist's vision of what a "state's sandwich" would be based on what is most well known/what comes to mind first when someone from outside of that state is asked to name a sandwich from that state.  Interesting displays on the cutting boards though I am more a fan of "food porn" shots showing a sandwiches in their fully-constructed, natural state.

Yes she's a young artist. I love the clean organized structure of the project. Just need some pretty pink circles for NJ!!! C'mon Pork Roll!! I will donate it with a few twenties in the box for her.
