Why would an Eye of the Round be better than Beef Brisket, Eye of the Round is flat out dry as so little fat content?
It wasn't dry the way Sonny's smoked it. It had the best smoke ring I've ever had the pleasure to observe.
The brisket is just not as flavorful and is a little too fatty, at least as it is presented at Sonny's.
I always ask the waitress about the change and if I'm the only customer who has inquired and they always say "oh, yeah we , get asked that all the time".
But, obviously, Corporate decided to go for lower cost than maintaining quality. Sort of like Arby's abandoning real roast beef in the '70s in favor of today's roast beef "product".
