Yeah! They're stupid easy, and we just pop them in the freezer to microwave later for quick breakfasts. My niece does a lot of freezer breakfasts for the kids in the morning before school, most of them in muffin tins because they're easy.

I thought, what better way to start Spring. I went to visit the Hens to see what they had for me. They had 3 eggs sitting in the nest. I came back home and shredded a potato. The secret to good hashbrowns at home is to squeeze as much water out of the shredded potato as possible. I fry mine in olive oil. A few slices of sliced rustic sourdough bread, hit the spot. Happy Spring everyone.

I just finished a bowl of Corn Flakes and an English muffin buttered and topped with peach preserves. It was my dinner breakfast. And in the morning I'll likely have a sausage, egg and cheese sandwich on wheat toast.

Far better than my pitiful breakfast wrap of yesterday, I got a delicious breakfast burrito at Rosalena's Cafe in San Jose.  There were several choices of meat or veg, but I chose bacon.  It was delicious and filling.

I had a breakfast Burrito for dinner tonight!  Stuffed with huge pieces of bacon, eggs, onion , potatoes and cheese!  Salsa Verde to dip each delicious bite into!

Oh yeah--that looks awesome!  I was missing salsa with mine but didn't even think to ask.  Coulda used some avocado, too.
 
This morning was crumb cake from Greenlee's Bakery, which was right next door to the burrito place.  A long-time local favorite for their cinnamon loaves which they sell in high end grocery stores and farmers' markets, they have a brick and mortar location in San Jose.  http://www.greenleesbakerysj.com/index.htm

Made up a few improvised breakfast tacos for me and my 11 year old.  The wife and daughter were out at some function someplace, so the boys were on their own.   Diced up a couple slices of leftover Boars Head ham, scrambled that into some eggs, topped with some shredded jack cheese and chunky salsa; oh, and a couple jalapeno slices, too.  Served in soft flour tortillas leftover from fajita night a few days ago.  The boy absolutely inhaled all of his, and half of mine, when I turned away for a moment. 
 
  Still felt a little hungry, so had a slice of whole wheat toast with real butter, topped with apple butter.  A couple cups of black Folgers, and I am ready to face the day...

If you were referring to the crumb cake it was pretty decent!  I finished it, which I don't always do with all the items I try at bakeries.  I've been collecting crumb cake recipes for a while, too, and now I gotta try one, because I'm sure a homemade one will be better.

I am a crumb cake lover - among other things - from way back.  Moist, light and lots of toppings is my style...do not like the drier versions.

I started to eat with less fat.I want to get my food full of the natural flavors without using fats and salts.
 
I used very little butter, only a bit on the Sourdough bread. The spinach, mushrooms, onions and red pepper were sauteed in olive oil. I used about 1/4 the amount of cheese. The hot sauce really helps to kick it up a bit.

Me, I had a "combo" bagel toasted, with butter, from Izzy's Brooklyn Bagels in Palo Alto.  http://izzysbrooklynbagels.com/about.php  Since I haven't had a real NY bagel in 20+ years, I'm not a great judge at this point, but they're easily better than those crappy bagel chains we have--even a little burnt.

I'm not exactly CC Baker but I make a mean coffee cake. I usually opt to make the more sinfully luxurious version (what we call "jelly cake") using excellent bakery recipes my Mother won in a poker showdown...






The muffins look too good not to make. I'll bake some this week & substitute my homemade maple sugar for brown sugar & use cake flour instead of AP flour.
AP flour makes a coffee cake dry.

L2B, The bagel looks top notch, not bad for being 3000 miles from the birth of the bagel in America. I was away from the East coast for 36 years until we went back two years ago. We enjoyed it so much I included it in our trip last year too. For me it's like the Disneyland of food opportunities. There is no place like New York. I am hoping the movie Frozen will get to Broadway, as a musical in 2015. I love the idea of grabbing a slice or a Knish as my family roams the streets of the city........now I want Katz's Pastrami!!!

I was just thinking yesterday that as many eggs as I go through here, whether in baking or all the bfast type food I love to make, I should have my own chickens, like you do.   I don't think my foolish dogs would like them though.

It works very well...



Both sides brushed with melted butter & a touch of heavy cream...



I flip after 2 minutes & continue to waffle one additional minute....



Voila waffle...



Next Wafflah experiment..." Scoffles" (scone waffles)

I grew up in a area that offered a lot of Italian food choices. My friends owned a Italian pizza restaurant. I would stop in for lunch and the Chef would yell out to me " I'm slicing peppers, you want a nice Egg & Pepper on a Italian roll" of course I said, Yep. I loved the Olive oil taste and the way the whole thing cam together. The sandwich is so simple, but so good. My version has red and green peppers, mushrooms, onions and spinach on a Italian roll.

This was an extra made on convection mode & it went to the squirrels....



I think I'm gonna make Scoffles on Saturday & leave a few for the Easter Bunny...

Peppers and eggs. Always a great sandwich back home Bill. But they're best when you use Italian frying peppers (cubanelles).
