I made hash with the leftover corned beef I had made.

Put a small amount in a fry pan and added an egg.


And that was breakfast today!

That hash looks delightful Agnes!

I will make fresh red horseradish ( the process is called penance) tomorrow so I have it in time for corned beef & corned beef hash.

The Hens are rolling out the eggs now, no sitting around the coop, I want some production. The Pullet eggs are small because these are first laying hens, they will get large as time goes on. The pullet eggs have a nice rich orange yoke and the whites are real clear. These eggs taste the way eggs should taste. 3 pullet eggs make about the same size portion as two large eggs. I would take the pullet size eggs any day of the week, the more yoke the better, and thats no yoke.........

Love that about the need for a huge cup of coffee! I embarrassed to say my oldest daughter Katie has be drinking coffee since she was about 2. With a lot of milk mixed in at that time. She is now 24 and makes really good coffee! We buy whole bean and she grinds it each day and makes us some really great coffee each morning!
Part of me is so proud and part of me is thinking, "stop being so picky!" I have to admit, I love a good cup of coffee!

That would be so cool!  I'm a lover of strong coffee, but too cheap and lazy to grind my own beans.
 
I, at one time had a coffee maker that ground the beans and had a pot ready for me when I woke up.  It went out the door when I woke up to a kitchen floor full of freshly brewed coffee.

The Corned Beef is in the crockpot for St. Patty's Day and the leftovers will miraculously transform into hash for next week's breakfast.

tomorrow's breakfast; corned beef hash with a couple sunny side up eggs, and leftover soda bread, toasted.  Black coffee, as it should be.  Best thing going the day or two after St Pat's Day...have to get up earlier to fry it up, but already have everything chopped and ready to go...

If the National Pie Championship falls on the last weekend of April every year...it will be easy for me to be there.

Mc Donald's Worldwide/Voice of Mc Donald's is held the same exact time in Orlando. My niece made it to the Voice of Mc Donald's worldwide finals last year.

Ann - I agree with them--love makes a huge difference.  One of the best breakfast "burgers" I ever had had the same ingredients as fast food, too:  sausage (as the burger), egg, cheese, (okay--AND bacon) on a roll, but it rocked!!  And it was made by hand.
 
CC - Two years ago the event was two weeks earlier in April, but I think that was an anomaly.

I used to make fried matzos for my niece and nephew (which they loved)--that was from my dad's heritage.  They go really well with bacon, too (from my mom's side.).

This morning it was very lightly toasted rye (such good NJ rye I try to keep the rye flavor...rather than the toast flavor) & yipes... forgive me...turkey bacon!

Specialty egg rolls are a good idea. Sometimes better than a traditional egg roll. We have some wacky fun specialty egg rolls in NYC.

In Milwaukee, a german restaurant, Maders, serves reuban egg rolls. Very good. And at another local, FABULOUS place,McBobs, they have a similar item. Very, very good. Gotta come to Milwaukee, lovetobake.....
And pnwchef-fantastic looking breakfast. You seem to make your eggs exactly as i like them.

Egg Roll and Egg Creams Festival sounds like a great event, CC.  And I can just picture people speaking those two languages--hilarious!  I want a dessert egg roll.   
 
Ann - That's part of the country I definitely want to spend time in.  I've tended to travel I-80, I-40, and I-10, but should branch out.  Wisconsin makes maple syrup, too (happening now!), which is my "drug of choice."  Mmmmmmm....
 
Maple syrup brings us back to the breakfast topic - yay

My husband makes it and it is so simple! Basically you make a white sauce (butter, flour & milk) and add hard cooked eggs that have been mashed, salt and pepper. So delicious! I love it on biscuits but my husband likes it over toast which is how he grew up eating it.
