Brunswick Stew - Montgomery, Alabama Fair - Please help!!! Years ago when I lived in Montgomery, AL. A group always had Brunswick Stew...either Civitans, Lions Club or something like that. Do they still do it and is there anyone out there that has a similar recipe?

I have been away for a while and just saw your thread.

Have no fear Cajunking is here with your recipe.  This recipe comes from a Dothan Alabama Lions Club member and they make each year for the county fair and the World's Peanut Festival.

Alabama Bruswick Stew

1 14-16oz can diced tomatoes (do not drain)
1 8oz can diced tomatoes w/peppers (do not drain)
3 8oz cans Swanson Chicken Broth
1 pkg (box) frozen Lima Beans
1 pkg (box) frozen whole kernel corn
1 pkg (box) frozen cut okra
2 medium potato (diced)
2 medium onion (diced)
2 boneless chicken breasts (smoked and pulled)
2 cups smoked pork (pulled)
2 cups smoked beef brisket (slice w/grain and pull into strings)
2 TBSP Lea & Perrins Worcestershire sauce
2 TBSP Molasses
2 TBSP Kitchen Bouquet
1 TBSP Liquid Smoke
1 TBSP brown sugar
1 tsp salt
1/2 tsp black pepper
1/2 tsp Tabasco

Dump all into a large dutchie (dutch oven) (or large stock pot with lid)
Bring to a quick boil, then drop heat to simmer
Cover with lid and simmer 4 to 5 hours.
After 4 hours make sure to shred the meat and check for seasoning
You may need to add more water/broth/beer/liquid to the stew as you go along
Stir occaisionally to prevent sticking

Serve

Some like it hotter so adjust up the cayenne levels or add more hot sauce
some like it a bit sweeter so adjust either the molasses or the brown sugar

Enjoy
