Food Waste

Hi everyone,
I am a final year Product Design student. I have worked part time as a waiter in several restaurants in the last 5 years.
For my dissertation/thesis I am focusing on the food industry and in particular food waste.
I am in the process of designing a system/product to repurpose waste and convert it into energy that can be fed directly back into the establishment. 
I would LOVE the opportunity to exchange one or two messages with some people in the industry to help develop my research.
