Re:Potato Leek Soup
This thread came back after a year and I guess I never did post the recipe. It's quite simple.
1 bunch leeks, thoroughly washed and diced, including green tops
3 Idaho potatoes, peeled and diced
1/2 stick butter
Sweat the leeks in the butter, do not brown. Add the diced potatoes, cover with chicken stock, cook until potatoes and leeks are tender. Add heavy cream, bring to a simmer, season with salt and pepper to taste. The potatoes should thicken it sufficiently but if the liquid is too thin, add a little cornstarch mixed with cold water.
